Raw Vegan Gluten Free Cashew Cheesecake

Not only is this a delicious gluten free cheesecake, but it's raw and vegan, meaning it is 100% dairy free! Can you believe it? It looks and is very creamy. Cashews contain enough fat to provide a rich creamy texture, the same texture you used to achieve using cream cheese. I've made a wonderful frosting using cashews in the past and it is heavenly! I know you're busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela's Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You'll see images of the varieties below the recipe. You can spice it up with ginger snaps, chocolate chip or chocolate chocolate chip. Get creative!

Note: This cheesecake contains no sugar other than the sugar contained in the sweetened condensed milk.

Gluten Free Cheesecake Ganache

It's my hubby's birthday, and he has requested a gluten free cheesecake. His favorite desserts are chocolate; therefore, I topped it with a chocolate topping (ganache), but it is optional. A cheesecake with a chocolate topping does not need to be very sweet. So, I cut back on the sugar in this cheesecake recipe. My guests love it!

I was watching Paula Deen the other day and her son was on her show and made stuffed strawberries with cream cheese and powdered sugar. I made them, too, as a gluten free sugar-free recipe! I can't think of anything that I would enjoy more on a hot summer day, and did! I had so much fun testing this recipe using different sweeteners. I didn't care for them with agave but enjoyed them with powdered sugar and stevia. Surprisingly, I liked these strawberries better with stevia. I hope you enjoy these, too!

Cheesecake is one of my favorite desserts. However, I've been getting a bit more creative as you can just make so many of the same old gluten free cheesecake recipes before you get bored with them. I'm always looking for something different and ran across a Caramel Cheesecake Recipe on the BBC's website. Though all of the ingredients were listed by weight since the BBC is in Europe, I weighed all of the ingredients and converted into cups for you and made a little change. Gluten Free Microwaved Cheesecake

Whoever thought you could make a gluten free microwave cheesecake? You can! Though this is one of those recipes that vary per microwave and per your tastes. However, when you're craving something sweet and want to make dessert for one, this may work for you. We love it in our house! It's a bit pastier than a traditional cheesecake, but with my homemade graham cracker crumbs and your favorite cheesecake topping, it's scrumptious. I had my recipe testers for my upcoming cookbook test this recipe. The majority of the testers enjoyed it. Some had to adjust the cooking times or temperature. You may have to experiment depending upon the wattage of your microwave. Meanwhile, once you have your graham crackers made or purchased, it's easy to make this gluten free microwave cheesecake.
