I stumbled upon how to make puffed rice shells by mistake. I love when my errors turn into new creations. This error turned into a discovery like no other. However, it turns out I was not the first to discover this method though I did find a new use for them.

Our guests this weekend went crazy over this appetizer. I served half of the filling in the new rice cups and the other half in butter lettuce cups. The main courses were Open-Faced Egg Rolls and Mongolian Beef accompanied by jasmine rice and sauteed garlic snow peas. This sweet and spicy appetizer was gobbled up by our friends last weekend. The wife is an amazing Thai cook. So, needless to say, I was flattered that they enjoy my chicken rice cup appetizers. You can use the filling in butter lettuce cups or the puffed rice cups. They're both incredibly delicious! Watch the video and see how easy the rice cups are to make.

This recipe may be made mild and sweet, without peppers, sweet, or as spicy as you wish with some added red pepper flakes. It is one of our favorite dishes.
