Gluten Free Cinnamon Raisin Bread

I never met a person who didn’t enjoy this bread, whether they were on a gluten-eating diet or gluten-free. You can use this bread for toast, French toast, or sandwiches with turkey and cream cheese, or grilled cheese. It’s simply delicious.

Since my fluffy gluten free cinnamon rolls recipe was such a big hit I thought I would swap the filling for something a bit more elegant. Chocolate ganache suited perfectly. The creamy texture of the ganache adds an additional texture to this dessert which is an important component in the culinary field. Your guest, friends, and/or family will appreciate your efforts as well as this dessert. I hope they enjoy it.

Image: Fluffy Gluten Free Cinnamon Rolls

I had posted a gluten free cinnamon rolls recipe a couple of years ago, and have been trying to make a fluffy version ever since. I tried about 4 or 5 different methods, none of which worked well. I had been under the impression from a cookbook that I had read early on that rising gluten free dough twice is senseless. Well, I learned that this statement was not true. A second rise for cinnamon roll dough is the key to making them fluffy or lighter. I plan on experimenting with this recipe by using my Gluten Free All Purposed Flour Blend next. When I do, I'll update this recipe. I hope you enjoy it.

Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, "Why not a gluten free pancake recipe?" There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline's Gluten Free Pancakes recipe. They were delish and I feel that they are a bit more healthy than a typical recipe. These were delish, and are dairy-free and egg-free! Enjoy!

Gluten Free Coffee Cake - Strawberry or Cinnamon Swirl

I was planning on improving my cinnamon roll recipe today, but it dawned on me that I could make one huge cinnamon roll by making a gluten free coffee cake. Then things took off from there and I used strawberry jam instead of a brown sugar and cinnamon filling. You can use either and I have included the recipe for the cinnamon filling. This is a light, cake-like texture and weight. For a heavier gluten free coffee cake use less milk. Enjoy!

Gluten Free Cinnamon Raisin Bread

My husband requested that I make him a gluten free cinnamon raisin bread. Having already created a cranberry cinnamon raisin oat bread, I thought I would use a different flour this time. In an attempt to make a more economical bread, I used the typical starches and white and brown rice flours. I really like this bread knowing it is sweetened only with molasses, and includes a little flax seed meal, as well. This bread is soft, much like a gluten-free sandwich bread, however, if you wish a lighter gluten-free cinnamon raisin bread, I would suggest using more tapioca flour than potato flour. This is what I am going to experiement with next. Enjoy!

Gluten-free Banana Nut Cinnamon Muffins

I have been wanting to create another gluten free muffin recipe that is refined sugar-free. Gluten free banana muffins are one of my faves! I used agave in this recipe, and course, bananas make a great natural sweetener so I did not have to add much agave at all. They came out perfect! Not too sweet, not as heavy as banana bread, moist, but not wet. Enjoy!

Gluten-free Cranberry Oat Nut Bread

My husband loves raisin bread, but I haven't made him any since I have been gluten free. He used to make his own using the bread machine. I wanted to make him a gluten free oat bread recipe with raisins this morning, but I was out of raisins (used them in the gluten-free oatmeal cookies I made for him last weekend). I don't care for raisins anyway, so I used dried cranberries instead. Oh! - it turned out so good! My hubby was very pleased, as well. I'm looking forward to adding walnuts next time, though the hubby is not a big nut fan. I also used Expandex® in this recipe, but you can make it without the Expandex by substituting additional oat flour. However, it will come out a little heavier. Perhaps adding an additional egg white may help, too, if you skip the Expandex. I can picture a chicken or turkey sandwich, possibly with cream cheese. Yum! It also makes a great snack! Enjoy this gluten free oat bread recipe with cranberries or raisins!

Gluten-free Grahams

One of the snacks those on a gluten-free diet miss is graham crackers. This recipe is not quite gluten free graham crackers, but a little thicker type of snack; in between a cracker and a cookie. I suggest using a sorghum flour blend, as sorghum is closer to wheat flour, which is what graham crackers are made with. It comes to us compliments of Wiley Publishing and the authors of Gluten Free Cooking For Dummies®, Danna Korn and Connie Sarros. The photo looked quite yummy in the book! Enjoy!
