Homemade Red Hot Chili Oil

Not too long ago, I created a recipe for Hot Chili Oil, but it's not red like the ones you purchase in the stores. Plus, it is not as hot, either. I don't know why I didn't think of this new recipe earlier. You get to choose which type of oil from which it is made. It's so easy, you can control the level of heat it creates, too. I discovered how to make mayonnaise much faster than traditional methods. I've tried using a high-powered mixer and food processor in the past, but they are extremely slow compared to this method. Using an immersion blender is the key! There are infinite variation possibilities. See the "Tips" section for suggestions.

Gluten-free mayonnaise is very easy to find. This gluten free, soy free, egg free mayonnaise recipe is not only easy to make, but is so much healthier than store-bought mayonnaise. I use Best Foods, however, I recently discovered that there are chemicals in my mayonnaise! I was shocked to find one of the chemicals to be EDTA (Ethylenediaminetetraacetic acid). They use this stuff to dissolve limescale! It is also used in cosmetics and many more uses. It's final. I'm making my own from now on! The color will vary depending upon which oil combination you use. Experiment with different oils and have fun!

Image: Gluten Free Soy Free Soy Sauce Substitute

It's difficult enough finding a gluten free soy sauce, let alone a gluten free soy free soy sauce. One does exist, though. South River Miso makes a gluten free soy free soy sauce substitute from chickpeas, Miso Tamari, chickpea flavor. It is supposed to be so good that they limit your purchase quantity because it takes at least 3 months to make. Their products are unpasteurized, living foods, rich in enzymes and beneficial microorganisms. They start shipping this year on September 15, 2011. I still need to contact them to find out if they avoid cross-contamination, though, as I see they make a barley miso, as well. I'll call them and update this page when I find out, hopefully today or early next week. Meanwhile, you can make your own gluten free soy free soy sauce substitute.

Homemade Allergen-Free Gluten Free Margarine

I was so tired of trying to find a gluten free margarine or gluten free margarine recipe that was both soy-free and corn-free that I decided to create one myself! This recipe is also dairy-free. It's so nice to know that it is free of chemicals, as well. Though I use some palm shortening in this recipe I would imagine you can use red palm oil (red has the most health benefits, and it is more of an orange color), though it hardens more than palm shortening. And palm shortening is less expensive than red palm oil. I used organic palm shortening. If you wish a deeper yellow color we all so used to, add a pinch of turmeric. I chose palm shortening for its color, softness and neutral flavor. When my husband tasted it, I asked him, "What does this taste like?" His answer was, "Margarine." I was a happy camper! I do taste a hint of olive oil, but that's a good thing! Enjoy!
