Today is National Chocolate Souffle Day! Who can resist? Not me! Souffles have a bad wrap for being difficult to make, but they aren't. I wouldn't advise poking them with a toothpick, but they are fairly easy. Just be sure to beat those egg whites, as instructed. With chocolate, you really can't do any wrong. Enjoy!

Red Quinoa Salad with Pomegranate Dressing
If you've been wondering about the difference between golden and red quinoa, there is none, other than the color. In this red quinoa salad, I chose the red variety just to add more color. It's easy to throw together. You don't even need a recipe, but I did write down everything so you'd have some ideas on what to use. Be sure to rinse your quinoa. It helps make it perfect. Enjoy!

Gluten Free Carrot Cake Recipe

I really needed a smaller size carrot cake, as my famous Gluten Free Carrot Cake Recipe is a bit too much for us lately. Using a 9-inch round pan versus an 8-inch makes for a lower cake, which fools us psychologically into thinking we're still having a large piece. The main thing I changed in this new gluten free carrot cake recipe is making a smaller batter and making it moister and spicier. There was a bit too many crumbs on the recipe in the above link. This time, it's perfect. A matter of fact, it is so good, you don't even need frosting. It's plenty of sweet and extremely moist. I used lots of ground cloves which I really enjoy and I think you will, as well. It tastes closer to pumpkin bread. If pumpkin spices are not your cup of tea, omit the cloves. Enjoy!

Gluten Free Italian Sausage and Peppers Recipe on a Gluten Free Sub Roll

On a cold winter day, you tend to reach or crave for comfort food. What better comfort food is there besides a gluten free sausage and peppers sub on amazing gluten free bread? Schar offers some amazing products. This recipe can be made even simpler if you purchase ready-made pizza sauce. However, you can make homemade (see link for recipe). I prefer the homemade with its Italian seasonings. Either way, it's delicious. My husband never passes this sandwich up.

Homemade Gluten Free Microwave Bread

Back in 2013, I created a Single Serve Dairy-Free Gluten-Free Yeast-Free Bread for Microwave. It tasted a bit too eggy, but was good in a pinch. I recently experimented with a dairy version using apple cider vinegar, a different flour blend, and omitted sugar or honey. It turned out much closer to the texture of starchy white bread like Wonder Bread. For a quick, single serve gluten free microwave bread recipe, it is pretty amazing.

Quick Gluten Free Alfredo Sauce

I had a few packages of Full Flavor Gluten Free Alfredo Sauce on hand. When I made it, it lacked the richness and flavor compared to the one I usually make from scratch. However, the usual recipe calls for heavy cream. I didn't have any on hand, but doctored up this package into what I thought was better than any other one I've had. It turned out, I couldn't eat anymore after tasting it as it contains tapioca, to which I am allergic. However, my hubby who usually prefers spaghetti sauce over Alfredo has been enjoying it for lunch and dinner.

Gluten Free Dairy Free Atkins-Style Shakes
Atkin shakes do not contain any gluten (wheat, rye or barley). They do, however, contain cross-contamination of gluten from their factory. Therefore, they are not labeled gluten free. This led me to develop a gluten free atkins shake recipe that is also dairy and soy-free. I hope you find it helpful. I included the carb ccount on the right side of each ingredient that contains carbs. Atkins shakes cost $7.89 per 4 count. This recipe contains 2.25 carbs. Atkins vanilla shake contains 1 carb and the chocolate, 2 carbs. So, you'll definitely save money making your own, but you obviously will consume more carbs. They are both 11 ounces. This recipe is also free of carrageenan and artificial flavoring, which Atkins shakes contain. The below recipe is vanilla and pumpkin-spiced flavored. You can flavor it as you see fit. Just be sure to add carbs where appropriate such as 2 grams for 1 Tablespoon of cocoa powder, which is not allowed during the induction phase. As is, this recipe is allowed during the induction phase as well as throughout the diet. Note: Many sugar-free substitutes contain carbohydrates. I use stevia, which is much healthier than cancer causing artificial sweeteners. Plus the variety I use does not any carbs at all. Important: A high protein diet such as the Atkins Diet causes a diuretic effect on the body. While you lose water, you are also losing important minerals such as calcium. If you are not consuming dairy on the Atkins diet, be sure to take calcium supplements.* You can lose about 1.75 milligrams of calcium through water loss for each gram of animal protein ingested.

Homemade Butterscotch Custard

While not all ready-made or boxed pudding brands are gluten free, you can always use naturally gluten free ingredients to make them from scratch. Instead of making gluten free pudding, which contains flour, I prefer custard. There isn't any floury taste or texture in custard because it does not contain flour. While this may not occur in pudding with wheat flour, it does in gluten free pudding. In addition, gluten free flour creates a bit of slimy texture in pudding (too thick). Custard really is the way to go. Serve this rich butterscotch custard plain or topped with caramel sauce and/or whipped cream. It's so decadent!

NEWS:

Gluten Free Cheerios!

General Mills announced their latest, upcoming product, Gluten Free Cheerios! 

Five of the Cheerios products will soon be released in gluten-free. They'll have the same great taste as their gluten counterparts; however the Multi-Grain had to be reformulated. The regular Multi-Grain contains wheat and barley. The gluten-free version will contain sorghum and millet.

The five flavors that will be available in gluten free are Original, Honey Nut, Apple Cinnamon, Frosted and Multi-Grain.

Look for the boxes marked "Gluten Free" on your store shelves in early July through fall.
