Gluten Free Blueberry Muffin in a Mug Recipe

While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. To make a cake version, substitute the 1 tablespoon of flax seed meal for 1 tablespoon additional flour. This gluten free blueberry mug cake makes a fast snack/dessert!

Gluten Free Blueberry Smoothie

I am fascinated by the popularity of mason jar recipes. I made this simple gluten free blueberry smoothie in advance knowing I would need something fast one morning. If you are a busy person that flies out the door, consider making some of your meals in mason or canning jars in advance. Image: Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan.

Sugar-Free Gluten-Free Blueberry Muffins

If you are craving gluten free blueberry muffins, this sugar-free, or low-in-sugar, version is amazing! They turned out very light, despite not sifting the flour blend. I added 1-1/4 cups fresh blueberries, but you can easily get away with using 1 cup. We just love blueberries! The streusel topping really makes these tender and moist muffins! I hope you enjoy them. Today is National Blueberry Pie Day! What better way to celebrate it than with a gluten free blueberry pie? You will find the link below to my gluten free double pie crust, which is pretty easy to handle compared to most gluten free pie dough. This makes transferring the crusts a breeze, especially in a double pie crust. If you're pretty new to pie baking, consider  cutting out shapes and placing it on top, like in this Gluten Free Cherry Pie. I think I'd use smaller stars next time, though. Meanwhile, I hope you get to enjoy some of this delicious blueberry pie, as it is made with fresh blueberries. If you don't have the time for fresh, use Comstock or Wilderness brand pie fillings. Enjoy!

Gluten Free Blueberry Peach Muffins

This gluten free muffins recipe comes to us compliments of Robert Rose, Inc., publishers of 250 Gluten-Free Favorites by Donna Washburn and Heather Butt. What a delightful recipe! My entire family has enjoyed blueberry muffins for years, but to have a gluten free blueberry muffin would be heavenly! It's been so long!  And peach is one of my favorite fruits! Make sure you use a gluten-free yogurt. I enjoy FAGE Greek yogurt in my baked goods. It comes in non-fat, low-fat and whole. Enjoy these little goodies! A basket of these for Mother's Day would make a wonderful gift!

Image: Gluten Free Blueberry Sauce

All blueberry sauce recipes may not be gluten free, but most are, provided you use a gluten free starch. Most blueberry sauce recipes call for starch, whether cornstarch, or possibly tapioca or potato starch in a gluten free blueberry sauce recipe. When using the recipe below, no starch is needed, as it is already included in the confectioner's sugar (powdered sugar). Most powdered sugar you find in the supermarkets contain cornstarch. If you're corn intolerant, or like to avoid GMO (genetically modified engineered) products, and you're fortunate enough to live near a Trader Joe's store, check out their Organic Powdered Sugar. It is made with tapioca starch, and a less refined sugar, evaporated cane juice.

Not All Better Than Bouillon Beef, Chicken, and Vegetable Base jars are gluten-free. 

One of our members just informed me that one of the varieties of Better Than Bouillon Base she recently purchased was not gluten free. Please read labels carefully as ingredients often change. This company clearly lists gluten as wheat, barley, and rye. I have contacted the company to learn more. I will update you all as I learn more.
