Cold Beet Soup

Do you love soup, but the summer heat is just unbearable? Try this cold beet soup recipe instead. It has a little heat as many Thai dishes do, but you don't have to make it the typical Thai way. Homemade Avocado Buttermilk Soup

Avocado anything is terrific in my book, but this avocado buttermilk soup is just fantastic. If you're fortunate enough to live in the San Francisco Bay Area, then you should make this before the end of the Dungenuss crab season, between June and July. Even in Central California, we have access to some. Of course you can make this soup without the crab salad in the center. You can make a chopped vegetable salsa instead. Enjoy!

Gluten Free Buttermilk Potato Soup Topped with Bacon Bits

This buttermilk cream of potato soup recipe was almost created in error. I recently had created a Crunchy Gluten Free Onion Rings Recipe for Answers.com. I had soaked the onion rings in buttermilk and had about a third of the rings leftover. I had left them in the refrigerator for about three days and when I opened up the container it smelled amazing! I knew I had to create a soup recipe out of it, and did just that. I have fallen in love with this soup and will definitely be making it again. I hope you enjoy it as much as I did.

Decades ago, rhubarb was considered a vegetable. It actually is, but in 1947 it was reclassified as a fruit because that's what people used it as. No matter the classification, rhubarb complements desserts well as its tartness balances out sweet flavors. This strawberry rhubarb dessert not only makes for a cooling summer treat, but a healthy one. Rhubarb contains Vitamin C, A and potassium. Potassium is a great way to fight the summer's heat. It definitely adds a splash of color to the table and it's fairly easy to make. I like it because it's naturally gluten free. Enjoy!
