Ever since I saw the Pillsbury Enchilada Bubble Up recipe, I just had to figure out to use my fluffy gluten-free biscuit recipe to make my own, saucier version which I call Gluten Free Enchilada Biscuit Bake. I finally had some free time and baked some up last week. It turned out so delicious! You can use red or green ingredients and their corresponding cheese.
