I made a large pot of this gluten free beef stew last night. It was so delicious! I used an inexpensive wine, not one I would drink, though that is not suggested by the pros. I froze a bunch for my husband to take on his out of town trips and for unexpected guests. I'm not big on potatoes in my stew, so I only used a few for my hubby to enjoy. You can add more if you desire. I like my beef stew served over rice. There is no need to add Gravy Master or Kitchen Bouquet as the wine naturally creates a dark gravy. Enjoy!

Gluten Free Baked Macaroni and Cheese Italian-Style

This gluten free baked macaroni and cheese is basically a ziti recipe, but I can't find any gluten free ziti pasta (straight tubular noodles, usually with grooved lines). So, I just renamed it, especially for those who are not familiar with Italian food. This is my go to recipe for unexpected guests. Sometimes I serve it the first day that my holiday guests arrive, as well. I'm usually too busy and exhausted to cook after cleaning the house and making sure everything is perfect. For guests, I use my Authentic Spaghetti Sauce Recipe which contains beef stew meat and Italian sausage. I always keeps some in the freezer. The dish in the photo below contains marinara sauce (tomato-based sauce without meat). I either make plain macaroni and cheese for myself, in a separate dish or add some pureed red bell pepper sauce since I am allergic to tomatoes. I hope you enjoy this recipe as much as my guests have.

I made this gluten free chicken casserole in an attempt to replace a similar recipe I used to make using Campbell's Soup Golden Mushroom Soup. I am allergic to tomatoes now, and cannot use the soup for that reason as well as its gluten content. I hope you enjoy this recipe. I enjoy its flavor and because it is almost a one dish recipe. (You still have to saute the onions in a separate pan.) Bon appetite!

If you are serving Italian food, this gluten free tomato basil bread recipe will make the perfect addition. It is very light in tomato flavor with a light to moderate basil flavor. However, when toasted and smothered (or lightly spread) with Fresh Garlic Butter, it is amazing! To make a zesty version, see below for the "Tips" section. This bread is also light and soft and would make an amazing sandwich bread.

Apricot Cherry Gluten Free Streusel Coffee Cake Recipe (or Tart)

Last month, I used my butter cake recipe to make this beautiful gluten free streusel coffee cake recipe. I just added fresh fruit and streusel topping. Instead of using my usual Gluten Free All Purpose Flour Blend Recipe in the topping, I used my Self-Rising Cake Flour Blend Recipe. It created a higher rise and lighter topping. If you prefer, you can use the same flour as you do in the cake. In addition, you can create a tart instead of a cake, omit the streusel and dust it with confectioners' sugar (see the photo below the recipe.) Enjoy!

Rather than a typical martini, which contains plenty of vodka, I created a sweeter and lighter in alcohol cocktail. I used to enjoy Godiva liqueur; however, it is not safe for those with gluten intolerance as stated on their website. Soft Gluten Free Buttermilk Dinner Rolls

I developed a soft gluten free dinner rolls recipe made with rice flour quite awhile back. That recipe can also be made dairy free, if desired. I used rice milk in that recipe. The recipe below, is more substantial as it has more structure. Though light in weight, it is not as light as the dairy-free version. With the use of buttermilk, they are a creamy goodness that my husband and I couldn't stop eating at just one this afternoon. Enjoy!

Fish and Vegetables Cooked Using the Papillote Method

En Papillote: Cooking in Parchment Paper Without Oil

The summer season is almost over. Now it's time to lose a few pounds before the holidays hit us hard (at least for me). En papillote is a method of cooking that omits oil and other fats such as butter. Instead, you steam-bake the items, seasonings, and if desired, a small amount of broth or wine, in parchment paper. (Aluminum foil is avoided as it can leach into your food.) The natural juices of poultry, fish, vegetables and fruit entwine and develop amazing flavor without oil or fat. You can steam-bake vegetables by themselves, too. Be sure to read the "Tips" section below to find out how to make my favorite en papillote chicken recipe.

En papillote cooking is so easy, you have to try it once and you'll be hooked! It can turn pungent fish such as mackerel into a delightful and healthful dish. You can even make low-carb dishes by substituting starch (rice, potatoes, pasta and bread) for additional veggies.
