I had put off developing a soft gluten free dinner rolls recipe, for too long. So, I made it a priority, and I am so glad that I did! I am not a big bread eater, but I just cannot stop myself with these rolls! They are not grainy at all. They are something my husband loves during the holiday, and I was certainly not going to make him rolls with gluten! When he got home he gobbled up many. Soft Gluten Free Buttermilk Dinner Rolls

I developed a soft gluten free dinner rolls recipe (above) which is made with rice flour. That recipe can also be made dairy free, if desired. (I used rice milk.). This recipe, is more substantial as it has more structure. Though light in weight, it is not as light as the dairy-free version. With the use of buttermilk, they are a creamy goodness that my husband and I couldn't stop eating at just one. Enjoy!

It is perfect, now that I have created the perfect gluten free self-rising cake flour blend. It has been working cup for cup in most of my cake recipes. Homemade Gluten Free Lady Fingers

You can easily make this gluten free lady fingers recipe by using my gluten free sponge cake recipe. (I have two recipes on this site for sponge cake, but I used the one calling for superfine rice flour.) The amount you make will vary, depending upon which pan you use. There are lady finger pans available, but you can get away with using a Hostess Twinkies Pan. You can also use a jelly roll pan and cut up individual pieces of cake. However, that method doesn't look as nice and you are taking the chance of the cake crumbling. If you do try this method, prior to slicing, refrigerate the cake at least 4 hours, preferably overnight. Meanwhile, now you can make traditional tiramisu and more!

Homemade Gluten Free Marinara Sauce

There are a couple of recipes that I make for my husband (not for me- I'm allergic to tomatoes) that I should use marinara sauce instead of bolognese (meat) sauce. I usually have a freezer full of bolognese sauce and tend to use it because it's there, the meat makes it flavorful, and he enjoys it. However, I'm tired of fishing out all of the meat to use it in my Chicken Parmesan Recipe. So, I began experimenting this week with a new, flavorful marinara sauce. I've come to the conclusion that adding wine makes the the most flavorful marinara. I hope you enjoy it.

Cookie Dough Balls Wrapped with Fluffy Gluten Free Biscuits

When you bite into these warm, fluffy gluten free biscuits, you bite into a gooey texture. What is it? It is chocolate chip cookie dough. It's sweet meets salty with a buttery texture. My husband exclaimed, "I've never had anything like this before," as he continued eating. I had to laugh, though, when he said that the biscuits are so light and the centers and so creamy that he doesn't need teeth to eat them. He did clarify later that they melt in your mouth when fresh out of the oven. Is it better than my raved about Fluffy Gluten Free Cinnamon Rolls? You be the judge!

Homemade Gluten Free Sponge Cake

When you wish to make a recipe that that has a lot of liquid, pudding, custard, etc., it is best to use a sponge cake versus a regular cake. Sponge cake absorbs liquid, can withstand refrigeration without becoming soggy, and is spongy/springs back when touched. This recipe provides all of that.

While experimenting on a different recipe I discovered how to use my Copycat Betty Crocker Gluten Free Yellow Cake Mix to make a sponge cake. Unlike the original gluten free Betty Crocker yellow cake mix, I've discovered a way to use my copycat recipe to create a two-layer dessert. Usually, there is only enough to make a decent size coffee cake. You can even use this recipe to make lady fingers using this Lady Finger Pan. Enjoy!
