Dear reader,

So many of you have requested recipes for one person. Others have requested desserts in individual portions that you can freeze. I've gathered all of my mini and individual dessert recipes in this issue of my newsletter for you. If you're the only person in your home on a gluten-free diet, you'll find your gluten-eating family members begging you to make them some, as well.

Happy New Year! If you've made a New Year's resolution to lose weight, these miniature meringue cakes are the perfect dessert to cut back on carbs. Use gluten-free dairy-free whipped cream as suggested below or heavy whipping cream is wonderful for making in advance, making more time to spend with guests.

Image: Mini Fried Gluten Free Pies

When you just cannot deal with rolling a double gluten free pie crust, these mini fried gluten free pies are ideal. However, unlike pie crust, they are crunchy. You may fill them with sweet or savory fillings. For my test recipe I just used Comstock fruit pie filling. Both Comstock and Wilderness brands are gluten free. These little gems are similar to empanadas (Spanish pies), but instead of baking them, you fry them. When empanadas are made in smaller sizes to serve as appetizers, such as these, they are named tapas. You may wish to check out my savory gluten free empanada filling (the crust on that recipe is a traditional gluten free pie crust), or my homemade sauteed apples for a healthier filling, if you're not a quick open-a-can type of person.

Financiers (pronounced "fee naun seers" in French) are mini French tea cakes characterized by its almond flour. These gluten free financiers are no different other than it calls for "gluten-free" all-purpose flour. I like to use my all-purpose flour blend as it uses superfine rice flour which does not create a gritty texture, yet it rises high and tastes very close to gluten all-purpose flour. This recipe is made up of primarily flour, almond flour, sugar, and egg whites. I've suddenly been on an almond flour kick and egg white kick. They are a healthy choice. I hope you enjoy them.

Individual Gluten Free Baked Alaska

Gluten Free Blueberry Muffin in a Mug Recipe

While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. To make a cake version, substitute the 1 tablespoon of flax seed meal for 1 tablespoon additional flour. This gluten free blueberry mug cake makes a fast snack/dessert!

Gluten Free Mug Cake: Strawberry Shortcake (Microwaved)

There are a few advantages to making individual portioned desserts. You can save money, consume less sugar, fat, and calories by avoiding subsequent servings, and they cook up quickly. I enjoy them because you can adjust the toppings and flavors to fit individual needs. Microwave mug cakes are perfect for college students. You may be able to think of additional advantages. Image: Gluten Free Chocolate Mug Cake

I'm underline on another project, but wanted to squeeze in a recent recipe request for a healthier gluten free mug cake. I chose chocolate this time, as I already have a recipe for a regular Gluten Free Coffee Mug Cake (actual coffee cake). I love coffee mug cake, as they are so easy to make! To made it healthier by using xylitol which sugar-free, and dairy-free by allowing your to choose your own variety of milk. I hope this helps more than just the requester, as it really is delicious. I am thinking about substituting some of the all-purpose flour for a little almond flour next time. If you try this idea before I do, please let us all know how it turns out. If you'd like, you can even add some natural peanut butter, or other nut butter, to the top/middle of the batter for a Reese's Peanut Butter Cup flavor. I took one bite while it was fresh out the microwave, and couldn't stop myself...and it was pretty much guilt-free!

One of my Twitter followers recently asked me for a gluten free coffee mug cake recipe. I had never heard of a such a thing! So, curiosity got the best of best of me, and I had to get right on it. After a little research, I discovered that most recipes are actually a coffee cake, though you can make other cake recipes in a mug. I thought how great for those that are the only ones in their household that are gluten free to have their very own personal gluten free coffee cake, in minutes!
