Gluten Free Waffles, Greek Yogurt, Fruit and Chocolate or Fruit Puree

Whether you're looking for a sweet treat to serve at a brunch or to your family, this decadent concoction, will do the trick. A few weeks ago I tried creating yeast-free, gluten free English muffins, but only tried once and it didn't work out very well. So, I thought this time around I'd start with a yeast recipe. I used my favorite gluten-free bread recipe. Straight out of the pan, they taste like they've just been toasted, on the bottoms! Mmmm...I enjoyed and hope you will, as well. These gluten free English muffins are the best, and the recipe of which I am most proud. They bring back memories and flavors of eating Thomas' English Muffins.

Gluten Free Johnny Cakes

Johnny cakes, also known as johnnycakes, jonnycakes, jonny cakes and hoecakes, are similar to pancakes, but they contain some hominy grits, or cornmeal, in this case. Using my recipe for gluten free bisquick or Betty Crocker's store-bought brand, this recipe is easy to make and tastes delicious. It makes light and fluffy pancakes with the grains of corn. Feel free to substitute buttermilk with the recipe for homemade or dairy-free buttermilk by reading the tips section.

Peaches & Cream Gluten Free Breakfast Bake

If you are a fan of bread pudding or French toast, you'll definitely enjoy this gluten free breakfast bake. Use your favorite fruit whether it be peaches, berries or apples. You can even use gluten free pie filling such as apple. Libby's and Wilderness brands are gluten free. You can make the bread on the dry side like you would when making French toast, or you make it a bit wet such as bread pudding. See the tips suggestions below. Meanwhile, this makes a wonderful dish for brunch.

I love this gluten free breakfast casserole because it so versatile! And my guests have raved about it, especially when made with bacon. You can skip adding meat altogether or replace the gluten-free sausage with gluten-free bacon or gluten-free ham. You can also skip the onion, add bell pepper or add more cheese. I have made a single recipe in a 7" deep dish pie pan and a 9x9" glass casserole dish. I have also 1.5 times the recipe in a 9x13" glass baking dish. This makes a great brunch dish. Be creative with this one and enjoy!

Thin Gluten Free Breakfast Pizza

Enjoy fried or poached eggs? You must try this recipe! With all of the toppings I could have on pizza, besides some cheese, I chose spinach and mushrooms for this gluten free breakfast pizza. Then I topped it with eggs to pack on the protein. When the egg yolks break, it's provides you with breakfast pizza sauce. Start your day off with this treat. It's delicious!

These gluten free wraps are soft and pliable, and that's not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don't allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free.
