No matter how many white gluten-free cakes I make, I still go back to this recipe. I can't call it a white cake because it's not. It's light yellow because of the egg yolk. 

What makes a cake moist? Moist cakes contain plenty of sugar, fat (oil, butter, or shortening), and are not over-baked. The sugar and fat tend to weight the cake down. However, this recipe contains a surprise ingredient. Can you guess what it is?

If you've been looking for a gluten-free wedding cake recipe or something similar, you've got to try this recipe. It's wonderful with coconut frosting! Then add lime for a tropical flavor. However, plain buttercream frosting or cream cheese frosting works well, too.
