Gluten Free Chocolate Cream Puffs

Pate a choux (pronounced "pat uh shoe") is a French, airy pastry. In the United States we know them as cream puffs. Fill these chocolate gluten-free cream puffs with any light filling. Experience the perfection of traditional cream puffs but with a decadent chocolate flavor.

Crunchy Gluten Free Chocolate Mousse Pie

A decadent chocolate mousse fills a crunchy chocolate crust, topped with lightly sweetened whipped cream and additional chunks of crunchy cookies. Make the crust in advance so you can breeze through making the filling and topping the following day. My gluten-eating neighbors went crazy over this pie!

Traditional Gluten Free Chocolate Mousse

This makes the richest and most decadent chocolate mousse you’ll ever have. It reminds me of what five-star restaurants serve. Don’t skimp on perfection. Use high-quality chocolate. Serve alone, top with whipped cream, or use as a filling for my upcoming Crunchy Gluten Free Chocolate Mousse Pie recipe.

Gluten Free Chocolate Turtles

I love chocolate turtles! I haven't had one since about 1999. Making these homemade turtles were fun, as this was the first time I made them. There are plenty of different ways to make them. You can use chopped pecans, pecan halves, as well as whole pecans. I used roasted coffee beans for the heads, but you can use pecans. Meanwhile, enjoy these luscious candies or give them as gifts.

Image: Gluten Free Dairy Free Brownies

A couple of years ago I created a Gluten Free Brownie Recipe, but I wanted to ensure that I addressed the needs of those who are dairy-free, as well. Therefore, I created this gluten free dairy free brownies recipe. Now that I have, I must say, these turned out incredible! I hope you enjoy them as much as I did. I don't if my husband will see any of this batch since he's out of town on business. And that is very much unlike me. Brownies are his favorite gluten free dessert, or any dessert, for that matter. I know he'll love these, and he's not 100% gluten free! He's only gluten free by default (me being gluten free). Enjoy!

Gluten Free Black Bean Brownies

Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They're so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as a pseudograin.
