Beef Fried Rice

Most fried rice recipes are gluten-free until someone places soy sauce in.  This gluten-free fried rice recipe calls for tamari, a gluten free soy sauce.  Fried rice is easy on the pocketbook, as the egg is added protein and allowing you to use less beef.  I hope you enjoy this recipe as much as we did!

Ingredients

  • 1 lb. beef strips for fajitas
  • 2 cups cooked white rice
  • 1 green onion sliced and loosely chopped
  • 2 eggs
  • 2 Tablespoons Gluten-free, low-sodium tamari soy sauce
  • 1/2 cup crunch lettuce, chopped (optional)

Instructions

  1. Cut the beef strips into bite size pieces.
  2. Place them in a pre-heated, oiled grilling pan or frying pan until browned.
  3. Beat eggs; fry, scrambling with whisk in preheated, oiled pan.
  4. If egg pieces are not small enough, chop into smaller pieces about 1/2” wide; set aside.
  5. In same pan, preheated with oil, add rice, eggs and beef; stir.
  6. Add soy sauce and the green onion; stir and cook for about 1 minute.
  7. If using, add chopped lettuce right before serving to keep its crispness; and stir.
  8. Garnish with a little chopped raw green onion.

The cucumber salad and creamy dill dressing recipes will posted within the next couple of days.  Both were delicious!

What a great recipe! I substituted grass-fed top sirloin bison and took increased the healthy factor. Lower in cholesterol and really “heart smart”. This substitution is not as hard to find as you might think. I bought mine at http://www.highplainsbison.com.

I just purchased some bison (ground) for the first time. I live on the West Coast and found it at Von’s (grocery store). I have not yet tasted it, but look forward to it! Thanks for the health info, too!
