I am known for this gluten free bread recipe. Several months ago, I experienced with the use of gum arabic in my Gluten Free Oat (or Sorghum) Bread Recipe. I added 1 tablespoon to the existing recipe linked above. I completely forgot about publishing the results, despite video taping the finished bread. I hope you find this useful in your gluten free bread baking.
I first began with replacing the 1 tablespoon of xanthan or guar gum with gum arabic. It was as if I had omitted gum altogether in the recipe as the batter was similar to cake batter. Gluten free bread dough should be a texture between cake batter and regular bread dough.
After mixing the ingredients with a high-powered electric mixer for about 3 minutes, I then slowly sprinkled in the usual 1 tablespoon of xanthan gum (while the mixer was running at high speed).

I am confused you use the same oat bread reciepe adding 1 table spoon of Arab and 1 table spoon of xanathum gums

Use the recipe as is and add 1 tablespoon of gum arabic. The original recipe already calls for 1 tablespoon of xanthan gum.

I made this and it is very very good. It really tastes like real bread. It’s in the freezer now I wonder how it’s going to come out.
