Crockpot Gratin Potatoes

Crockpot Gratin Potatoes with Cheddar Cheese

Did you know there was a difference between au Gratin and Gratin Potatoes? There is. Is Corned Beef Gluten Free? + Slow Cooker Recipe

Gluten Free Corned Beef, Cabbage, Carrots and Potatoes

Every year around this time, my mom used to make corned beef and cabbage. It wasn’t until recently that I realized it wasn’t named Corn Beef and Cabbage. I didn’t realize the beef was “corned”. The “ed” makes total sense. I’m not alone, though, and either are you if you didn’t know this. There are over 18,000 people each month that search for “gluten free corn beef” via Google. Gluten Free Apple Bread Pudding

Gluten Free Apple Creme Brulee Bread Pudding

I developed a bread pudding recipe for KitchenAid’s 6-Quart Slow Cooker with Easy Serve Lid back in 2012. I have played around with the recipe a couple of times since then. I have doubled the custard which I enjoyed much better. My husband is a bread lover and likes it dense with a single custard amount. So, it’s really up to you. Recently, I used the standard amount of custard, but I threw in some Comstock apple pie filling. (You can use homemade, if desired.) This gluten free apple bread pudding turned out delicious and it’s made in a slow cooker! Continue reading “Gluten Free Apple Bread Pudding”

Gluten Free Chicken Adobo

Chicken Adobo Egg Rolls

I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!

The cake layer is made from traditional blondie ingredients. Enjoy. Continue reading “Gluten Free Caramel and Pecan Blondies”

Tender Gluten Free Gourmet Boneless Beef Short Ribs – Sweet & Spicy with Wine

Image: Boneless Braised Short Ribs

We were given a bit of beef recently, just when I wanted to go back to a heavier chicken diet.  How could we say no, right?  In the batch of meat, were over seven pounds of beef short ribs. I am so tired of making half the ribs in barbecue sauce in my crockpot for my husband and the other half plain because of my tomato allergies. I usually end up using a gluten-free, tomato free Worcestershire sauce. In my attempt to come up with an alternative we both can enjoy I turned to one of my favorite sauces, a balsamic reduction. Then I considered a wine sauce.  Why not combine them and add in some sugar or molasses? I had so many ribs they wouldn’t possibly fit in my small crock pot; therefore, I cooked them on the stove top. They came out so yummy, something I would expect in a fine restaurant. I won’t use any other short ribs recipe in the future.
