I have been craving a good bread bowl, which I have not mastered yet. Instead of making my own, I used a gluten free ciabatta roll made by Schar. They are light and have a wonderful texture. If you are a fan of bread pudding or French toast, you’ll definitely enjoy this gluten free breakfast bake. Use your favorite fruit whether it be peaches, berries or apples. You can even use gluten free pie filling such as apple. Libby’s and Wilderness brands are gluten free. You can make the bread on the dry side like you would when making French toast, or you make it a bit wet such as bread pudding. See the tips suggestions below. Carob, Chocolate or Chocolate Chip Gluten Free Oat Crepes

Gluten Free Oat Crepes with Chocolate or Chocolate Chips

These crepes are simply amazing! I enjoyed making these gluten free oat crepes by halving the recipe and adding finely chopped carob chips (you can use any gluten free chocolate or chips) to part of the batter. To the other portion of the batter I added 3/8 to 1/2 cup of homemade ganache. Then I used the remaining ganache to spread on some of the crepes, along with peanut butter and sliced strawberries. To die for! What makes these crepes a healthy choice is that they are made without the use of high-carb white starch or gums. All you need is gluten free oat flour or ground oats. Enjoy.

Gluten Free Muesli

Homemade Gluten Free Muesli

When you make muesli (pronounced “muze ly”) you can add just about any dry cereal, nuts, seeds and fruit you desire. The one thing you have to keep in mind when making gluten free muesli is to use brands that are safe if you are intolerant to gluten. Be sure to use certified gluten free oats as regular oats may contain as much as 10% gluten. If you are oat intolerant, substitute with additional cornflakes and nuts. Mini Fried Gluten Free Pies: Sweet or Savory (Dairy-Free)

When you just cannot deal with rolling a double gluten free pie crust, these mini fried gluten free pies are ideal. However, unlike pie crust, they are crunchy. You may fill them with sweet or savory fillings. For my test recipe I just used Comstock fruit pie filling. Both Comstock and Wilderness brands are gluten free. These little gems are similar to empanadas (Spanish pies), but instead of baking them, you fry them. When empanadas are made in smaller sizes to serve as appetizers, such as these, they are named tapas. You may wish to check out my savory gluten free empanada filling (the crust on that recipe is a traditional gluten free pie crust), or my homemade sauteed apples for a healthier filling, if you’re not a quick open-a-can type of person.
