A healthy way to make pancakes is by replacing the high-starch content of gluten free flour blends with some almond flour. However, to make even healthier pancakes, replace much of the batter with apple. Not only are apples naturally sweet, but they contain moisture and fiber. More importantly, this recipe makes delicious gluten free apple pancakes. Dust with cinnamon and cover with pure maple syrup or powdered sugar.

Gluten Free Buckwheat Blini – Russian Yeast-Risen Pancakes for Appetizers and More!

Using buckwheat flour along with other gluten free ingredients, you can make fluffy Russian pancakes small enough to use as a base for appetizers or to serve for breakfast Typically, blini are served with caviar or smoked salmon on top of sour cream. Nowadays, you can serve them just about any way you desire. Use creme fraiche or cream cheese with salmon roe (shown). How about using something inexpensive like chicken, tuna, or egg salad? When I was at my daughter’s house babysitting recently, she purchased some Simple Mills Gluten Free Pancake Mix. I thought I’d give it a try and was bowled over with how delicious they turned out. If you know me, I just had to create a recipe for everyone to make them at home to save money; and that I did! They turned out just as delicious, too! This mix may be used to meet other baking needs besides pancakes. Try using it in recipes  calling for Bisquick. You can even use the listed substitute to make  vegan gluten free pancakes. My granddaughter was visiting and the need to be on the BRAT diet (bananas, rice, applesauce, and toast) arose. So, on short notice, I threw together a few ingredients to make some applesauce pancakes without any starch, just rice flour. Of course, I omitted gums as well. You can also make them with bananas.
