Gluten Free Butter Cookies (French Sablés)

These gluten free butter cookies are named “sables” after the town in which they were first made in 1670, Sablé-sur-Sarthe, a town in West France. The word means “sand” which is fitting of these cookies as they are tender and have soft crumbs that crumble easily. They are also known as “sand butter” cookies. Generally you make them without eggs, but if you prefer, you may make them with heavy cream. Roll out and cut the dough. You can even sandwich them with your desired filling. However, the dough may simply be sliced and baked. Sables compliment custards, poached fruit, and other moist desserts, similar to biscotti. My new gluten free yellow butter cake recipe is perfect for this gluten free checkerboard cake. You don’t want to use a thin batter in a checkerboard cake because when you remove the divider ring the batters will run into one another. Yes. You need a special ring for this recipe. I have linked to the Wilton’s Checkerboard Cake Pan Set in the ingredients list. It is so fun to make this cake. Don’t feel intimidated as it is not complicated at all. It turned out very moist and delicious. You may skip the chocolate and add another flavored extract or food coloring to the other half of the batter. You can make it to fit any holiday color scheme. I have used this basic recipe as is and in various other ways. This crust is perfect for a gluten free cheesecake recipes. Gluten Free Cream Puff Recipe: Rings with Caramel Whipped Cream – Paris-Brest

Pate choux in French is a dough made simply with eggs, flour, and sugar. In America, this dough is used for cream puffs. This particular gluten free cream puff recipe is shaped as rings instead of the typical puff and is filled with a caramel whipped cream. The real Fench name for this dessert is Paris Brest. They make a spectacular presentation. I added toasted almond slices to mine and a sprinkle of confectioners’ sugar. Flourless Gluten Free Chocolate Roll Cake – Roulade

I love the fact that this gluten free chocolate roll cake bakes so quickly compared to regular cakes. This recipe especially bakes fast because it does not contain flour. Instead, it contains mostly eggs and chocolate. I was so excited to give this a try I even purchased a jelly roll pan just to make this cake. The pan turned out to be perfect size for so many other things (small batch cookies, cinnamon rolls, sheet cakes, and baking rolls, to name a few.) Meanwhile, the cake turns out light, yet has a rich chocolate flavor. You have a choice of fillings and toppings, one of each may be made dairy-free. I hope you enjoy this recipe. It looks like a huge Hostess Ding Dong. Doesn’t it? You can make it taste it like one, too, if you use the fluffy white frosting as a filling. I prefer cream cheese frosting or whipped cream, though.
