Gluten Free Malaysian Chicken Satay (Fish-Free, Dairy-Free, Refined Sugar-Free Options)

What can you place on a stick to eat besides shish kebobs and corn dogs? Chicken satay! Satay originated in Indonesia, but there are also Asian versions. Satay is different than shish kabobs, mainly in the sauce. Instead of barbecue sauce and such, Thai satay recipes call for coconut milk and curry. Indonesia satay, also known as sate ayam, calls for ketchup or tomato sauce and sugar. Malaysian satay calls for such ingredients as belacan (shrimp paste), galangal (a relative of ginger), and lemon grass, which are not available to everyone. This is my own unique gluten free, soy free, Malaysian version of satay using more commonly known ingredients. You may use chicken or a tender cut of beef or pork. Pork tenderloin is wonderful! Gluten Free Bars – Apple Walnut (Sugar-Free)

I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. Gluten-Free Grain-Free Applesauce Cake

Baking gluten free isn’t always easy, but if you’re also on a grain free diet, choices are more limited. This gluten free applesauce cake recipe is moist, can be made with or without starch (see tips for all almond meal without starch), and does not call for any gums, butter or oil. It is a one-layer cake, about 1″ high and about the weight of banana bread, though tossing in an additional egg will make it lighter. Some cakes may not necessarily need a springform pan, but because of this cake’s weight, I highly suggest using one, as to not break it when removing it from the pan. I was in a hurry and defrosted some steak, thinking it would be the fasted thing to make. Then I decided that plain steak, whether barbecued, grilled or fried, just didn’t appeal to me. I haven’t had a salisbury steak in decades, and have never made one myself. So I decided to make a gluten free salisbury steak recipe for this blog, as it is a classic American dish. When my husband tasted it he said it was delicious, and added, “Did you notice that I said ‘delicious’? I usually say something’s good. Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. I had posted a link to the Gluten Free Prairie Oat Bread I had developed for Gluten Free Prairie awhile back on my social media channels. However, that gluten free oat bread recipe was developed specifically for Gluten Free Prairie Oats, as their product produces a higher rise and a lighter bread. So, I thought you’d all appreciate a similar oat bread recipe which included dairy that can be used with any gluten free oats. And here it is! Using dairy guarantees a higher rise and less, if not any, shrinkage.
