When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. Holiday Gluten Free Mashed Potatoes

These gluten free mashed potatoes are to die for! A family member made these a few months ago and I was afraid to eat them, as I had no idea if the bacon was gluten free, but I found out that they included sour cream and cream cheese, as well. All of the guests were raving about them, and I just had to make them, gluten free. She had added some cheddar cheese to the top. I’ve added made these with cheese on top, inside, and without cheese. You just need to make sure all of your ingredients are gluten free, including the bacon, cream cheese and sour cream. You may mix in bacon or your favorite cheese. I like cheddar. I added crumbled bacon to to pof my gluten free mashed potatoes. I bet the left overs make wonderful potato pancakes! Just fry them cold with some butter. Yum! Can’t wait to try it!

Gluten Free Pork Tenderloin

Whether cooking for a small group or a large crowd, gluten free pork tenderloin is an easy, yet elegant main course. I chose to cook two pork tenderloins, one 2.75 pounds, and the other 2.65 pounds. A half pound per person is sufficient, and will most likely yield some left overs. This gluten free pork tenderloin recipe is no different than any other pork tenderloin recipe, other than gluten free starch was used to thicken the gravy. Gluten Free Spritz Cookies Made by Hand

These gluten free spritz cookies are popular in Scandinavian countries during Christmas time. You can even make them with a device. They are a butter cookie either made using a cookie press, pastry bag, cookie cutter, or handmade shapes. Not having a cookie press myself, yet, and since the dough was too thick for a pastry bag, I chose to experiment with different methods of joining balls of cookie dough together to make my gluten free spritz cookies. I was hoping this would help those who cannot afford a cookie press. I created 1/2 teaspoon balls of dough, either using 5 or 6 balls, and filling the center with the same size or smaller balls. I found the smaller balls, close together, work best, seen in the cherry filled cookie in the photo below. Of course, the traditional version is not gluten free, however, just replacing the flour for gluten free flour and starches, and adding a bit of baking soda and xanthan gum results in great gluten free spritz cookies. These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. Gluten Free Gingerbread Cookies

In making gluten free gingerbread cookies, the trick is to have a very stiff dough and chill the dough to prevent spreading during baking. This dough is high in starch, making a soft (a bit chewy) cookie. If you like them crispy, I suggest using a higher rice flour to starch ratio and skip the baking powder. I chose to make a softer gluten free gingerbread cookie because my survey on Facebook resulted in more soft than crispy votes, and I cannot resist a soft or chewy cookie. Gluten Free Cream of Chicken Soup Recipe

This gluten free cream of chicken soup recipe is made with fresh ingredients. Add to other soups for an easily digestible protein. Using chicken breasts is not recommended, as it is too dry and creates a gritty texture. Brown chicken parts add more flavor. Ensure that the chicken broth you use is gluten free, or use the broth/water used to boil the chicken, though it will not have as much flavor as pre-made chicken broth. One of my readers requested a gluten free rice bread recipe containing rice flour, arrowroot flour and guar gum due to several grain sensitivities. Here it is! The best I can do right now. I added some flaxseed meal for a bit of fiber and flavor, an extra egg white for added protein, as baking gluten free rice bread with only arrowroot flour, versus potato and tapioca starch, is whole different ball game! It was challenging. The recipe below was my first attempt. On my next attempt I’ll try increase the amount of water and see if I can get it rise a bit higher, using a 9×5″ loaf pan. I used a 9×5″, but it did not rise, above the rim, and then fell a bit during cooling. A 9×4″ loaf pan would be perfect for the recipe, as is. This gluten free bread recipe did not turn out fluffy like my usual gluten free bread recipes, but it is certainly edible and tasty! It’s just better toasted. Whoever else has similar grain sensitivities, I hope this gluten free rice bread recipe is some to use to you.
