This gluten free gingerbread house recipe is both structurally sound and delicious. A matter of fact, I’ve never cared for gingerbread, even when I ate gluten. I couldn’t stop eating this one! It truly is the best gingerbread house I have ever tasted. My hubby, who loves gingerbread cookies/houses, says it tastes just like the gluten versions. Most of the sugar cookies I have tasted are a bit dry as they all contain egg. Therefore, I added additional butter to the recipe I developed so that you do not have to sacrifice on flavor or texture. Additional butter makes them more delicate, but not as delicate as shortbread. They are somewhere in between shortbread and sugar cookies. Earth Balance sent me a sample goody package quite awhile ago and I finally got around to developing a recipe using their Creamy Coconut Peanut Butter Spread (also available in crunchy). Gluten Free Rocky Road Ice Cream Sandwiches

Homemade Gluten Free Ice Cream Sandwiches

While this recipe is not new, I added some topping options, or shall I say sidings, as they go onto the sides of these delicious gluten free ice cream sandwiches. I did not use any marshmallows, which is typical of rocky road, but you can add them to the ice cream, if desired. Just be sure to use gluten free marshmallows such as Jeff Puff. I usually find the large Jeff Puff marshmallows at my local store and then cut them into smaller pieces when necessary.

Gluten Free Ginger Snaps - Ginger Cookies

A gluten free ginger snaps recipe (officially spelled “gingersnaps”) with a soft baked center with a chewy crust and slightly crisp edges. They are traditionally thin wafers. You can make them thin and crisper simply by slightly flattening the dough balls and baking them a tad bit longer. Gluten Free Butter Cookies (French Sablés)

These gluten free butter cookies are named “sables” after the town in which they were first made in 1670, Sablé-sur-Sarthe, a town in West France. The word means “sand” which is fitting of these cookies as they are tender and have soft crumbs that crumble easily. They are also known as “sand butter” cookies. Generally you make them without eggs, but if you prefer, you may make them with heavy cream. Roll out and cut the dough. You can even sandwich them with your desired filling. However, the dough may simply be sliced and baked. Sables compliment custards, poached fruit, and other moist desserts, similar to biscotti. Gluten Free Chewy Chocolate Chip Cookies

While I have a few recipes for chocolate chip cookies on this site, they are either double chocolate, soft, or a bit crunchy. This one is your typical chewy gluten free chocolate chip cookies. I don’t know why I haven’t developed a recipe for them earlier as they are one of my favorites. I hope you enjoy this recipe as much as we have.
