Just be sure to use a recipe like this one that has strong flavors like chocolate, cinnamon, lemon, etc. They mask the lemon or vinegar in the mayonnaise. Meanwhile, you can use a 9 x 9 or 9 x 13-inch dish to make this cake. So good!

You will love these gluten free chocolate chip oatmeal cookies. It’s like three cookies in one. Before I ever made them, my husband said, “They’re just going to be missing raisins!” (He’s a huge raisin oatmeal cookie fan.) These cookies contain both chocolate and peanut butter chips as well as oats. They’re our new favorite cookie!

Popular first in the St. Louis area, and now around the country, the gluten free version of Ooey Gooey Butter Cake is now a thing. I never thought I would enjoy something so sweet, but I love it more than cookie dough! This dessert has a chewy crust at the bottom with chewy crisp edges that everyone will fight over. There is a thin crust on the top and the cream cheese filling is gooey, and a bit like cheesecake but a little softer and sweeter. It’s a rich dessert, but it’s so scrumptious, that it’s hard to stop at one piece.

Gluten Free Vertical Layer Cake

I am just so excited about this cake! Prior to my retirement, I have several bucket list recipes to develop. This one I did, just for the challenging aspect alone. It’s not only a unique and stunning presentation but the cake and frosting are incredibly delicious. Though the cake is completely dairy free, (you may use dairy if you wish), it is rich and moist, which is unusual for a sponge cake. I won’t make sponge cake any other way from here on out. In addition, the recipe for the frosting, my favorite, Italian buttercream, is laid out to address anything that goes wrong (too thin or looks curdled). This is the perfect recipe to use for a roll cake or vertical layer cake.
