Gluten Free Casserole: Beef Pesto Rice

In a rush to make a gluten free dinner? Try this easy gluten free casserole recipe using premade gluten-free basil pesto. Add veggies, if you desire, or serve with a salad. This recipe includes only 4 ingredients and can be made in about 15 minutes. Some rice brands may take longer to cook, however, I found one brand that cooks in under 20 minutes, less. You can speed up the cooking time by using instant rice, which is lower in carbs and only takes about 5 minutes to cook. Gluten Free Casserole: No Egg Chicken Carbonara

I broke all the rules in making carbonara. Thus the title, “Gluten Free Casserole”.  I used penne pasta, no egg yolk, mozzarella instead of Parmesan, and more.  It is so yummy! You can make this an easy recipe by using pre-cooked gluten-free crumbled bacon. This dish has a gourmet flavor, as I used a bit of white wine. However, you can substitute the wine with additional chicken broth. Add veggies, if you desire. I am looking forward to trying this gluten free casserole with fresh baby spinach. Gluten Free Vegan Casserole with Artichoke Hearts

When my husband isn’t home for dinner, I often just throw any ingredients in a pan and go for it. I don’t need meat every night. This is my favorite out of all of my gluten free pasta recipes, and it happens to be gluten free vegan. The other night I went in my pantry for dog food when I spotted a jar of artichoke hearts and immediately thought of some with pasta, along with red bell pepper. The rest is history. I used just about every Italian ingredient I could get my hands on in my kitchen to create an authentic gluten free Italian recipe. It’s something that I knew must already exist; however, I had no name for it. That’s all I knew was I would be happy to pay for this in a fine restaurant as a main dish. I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! I needed to do a review for Schar’s pasta for my gluten free gift baskets website and decided to create a new gluten free pasta casserole recipe just for the occasion! What’s more Italian than pasta and Italian sausage ? My husband and I not only enjoyed the dish, but Schar’s tagliatele pasta, as well. The pasta contains mainly corn and tastes much like regular, glutenous egg noodle pasta.  It was a real treat!  If you do not eat corn, then by all means use a gluten-free brown rice pasta. Gluten Free Stove-Top Chicken Potato Casserole

Gluten-free Chicken Potato Casserole

This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier!
