If you’re looking for a small batch gluten free puff pastry, this recipe is perfect to use as a base for up to 12-inch round pans or about 4 Danish pastries. When baked in a 9-1/2-inch springform pan, it will shrink about 1-1/2 inches. This small batch recipe is one-quarter of the recipe that you will find here. In addition, I’ve added a new ingredient substitute that will help prevent sogginess in cakes where this pastry is used as a base. This is especially useful for desserts filled with custard. I’m using this as a base to make a St. Honore cake like the famous bakery, Victoria Pastry Company, makes in San Francisco. Enjoy! Everyone raves about how authentic the texture and flavor is of my Crunchy Gluten Free Graham Cracker Recipe. I wanted a crunchy gluten free peanut butter graham cracker reicpe, but I couldn’t find even a gluten-containing recipe. So, I got to work and I am so glad that I did. They taste incredible and are crunchy too! You can substitute almond butter or tahini (sesame butter) for the peanut butter. Eat them plain, soak in milk, serve with ice cream, broken up in parfaits, or use them to make a pie crust just as you would with traditional graham crackers. Also, see the tips section to learn how to use this dough to make a single pie crust without making them into graham crackers first.

This new whole grain gluten free pastry flour blend is free of added starch such as potato, tapioca, arrowroot, rice and cornstarch; inexpensive to make, and can be made even healthier by following my tips. You can make it even less expensive by using the cheapest of the whole grains. I also provide a gum-free substitute.

When a lettuce wrap is not substantial enough, whip up these easy to make Asian rice wraps! They are free of gluten, fat, soy, dairy, corn, potato, eggs, gums, nuts, yeast, and more! Make them low-sodium or sodium-free, if desired. Serve them filled with chicken mixed with Sweet Red Chili Sauce, Chicken Fried Rice mixed with Sweet Red Chili Sauce (as pictured), or my favorite, Chinese Chilled Chicken. Using chicken thighs, legs, or breasts, its combination of spices is something you will surely enjoy. I love this recipe for fingerling potatoes for a few reasons. I don’t have to peel the potatoes. I don’t have to slice small potatoes. The best thing is that they are incredibly delicious. I even surprised myself. I make them every chance I get! I can even eat them while on the Weight Watchers diet! We enjoy these potatoes more than mashed potatoes, and that says a lot.
