Gluten Free Spinach Pasta Recipe

Image: Homemade Gluten Free Spinach Pasta

This gluten free spinach pasta recipe is adapted from my Gluten Free Egg Noodle Recipe. You may be surprised that spinach pasta does not contain a lot of spinach, but it certainly is healthier to include it than not. Spinach pasta brings color to meal and a bit of savory flavor. You cannot tell it contains spinach when you taste it, especially if you use a flavorful sauce. I tested mine out with my latest Gluten Free Bechamel Sauce mixed with Parmesan cheese. I hope you enjoy it as much as we did. Continue reading “Gluten Free Spinach Pasta Recipe”

Bacon Cheeseburger Stuffed Gluten Free Biscuits

Image: Stuffed Gluten Free Biscuits

If you’re in the mood for a calzone, making these gluten free biscuits stuffed with a bacon cheeseburger filling. Just add some dough to a muffin tin, add your favorite filling, and cover it with additional dough. It can be that easy. You can use traditional filling or this bacon cheeseburger filling. The best part about this filling is you can add your favorite hamburger condiments and make them to order. My husband loved these gluten free biscuits. His reaction was, “What was that? Those were gooood!” I’m sure kids would love them, as well. After all, many husbands are like kids. (smile) Sorry guys! Continue reading “Bacon Cheeseburger Stuffed Gluten Free Biscuits”

Gluten Free Lumpia and Dipping Sauce

Image: Gluten Free Lumpia

While I already have a gluten free egg rolls recipe on this site, this gluten free lumpia recipe is a bit different. The filling and dipping sauce is spiced with garlic, and the sauce has strong accents of garlic and soy sauce. I usually make my egg rolls filled with ground pork, vegetables, and scrambled eggs and my spring rolls with all vegetables. This lumpia is filled with ground beef and vegetables, though you may use pork, shrimp, and more, as well as just vegetables. Either way, they are crispy and delicious as well as the sauce. Thin Soft Gluten Free Wraps

Image: Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. You finally have a thin, soft gluten free wraps that is pliable enough to roll and slice your favorite appetizers. Enjoy! Continue reading “Thin Soft Gluten Free Wraps”

Gluten Free Cream of Mushroom Soup

Image: Gluten Free Cream of Mushroom Soup

While there are brands of gluten free cream of mushroom soup, making a batch of homemade soup is always preferred. It contains more flavor and is healthier as you can control the amount of cream, sodium, etc. This soup may be made using chicken broth or mushroom broth made by soaking dried mushrooms in water (see Tips section). If you are seeking brands of canned mushroom soup, see the link below for my gluten free products list.

Chocolate Gluten Free Crepes

Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes. For plain crepes see Gluten Free Crepes (Sweet or Savory). Continue reading “Chocolate Gluten Free Crepes”

Gluten Free Egg Foo Young

Image: Gluten Free Egg Foo Young

Egg foo young, also spelled egg foo yong, egg fu yung, egg fooyung, and egg furong, literally means “lots of eggs”. This gluten free egg foo young is prepared with eggs, vegetables, and meat or shellfish, if desired. You can add your favorite vegetables or traditional bean sprouts, bamboo shoots, sliced cabbage, or mushrooms, to name a few ideas. Water chestnuts or bamboo shoots add a delightful texture. What makes it distinctly different from frattata (its Italian cousin) is the sauce it is served with. Gluten Free Donair Recipe – Meatloaf

Image: Gluten Free Donair

This gluten free donair recipe was adapted from Harvard University’s Donair recipe. Donairs are similar to gyros but better. The history behind donairs is very interesting. When Peter and John Kamoulakos tried to introduce their Nova Scotia restaurant clientele to lamb gyros, it did not go over very well. They changed the lamb to beef and created a sweet sauce (some say using evaporated milk, sugar, vinegar and garlic powder). Today there are two restaurants in Ontario, Canada named Halifax Donair (Halifax is a municipality [large city] in Nova Scotia). You will find many Canadian pizza restaurants serving donairs and donair pizzas. This gluten free donair recipe is my version of this very messy, yet savory and sweet fare.

Meatloaf

This meat also makes a wonderful meatloaf, especially when made with ground turkey. Continue reading “Gluten Free Donair Recipe – Meatloaf”

Easy Frittata Recipe: Sweet Potato and Zucchini (Naturally Gluten Free)

Image: Sweet Potato Zucchini Frittata

What makes this an easy frittata recipe is that you can use leftover to make it right on your stovetop. One night during the week, make sweet potatoes and boiled sliced carrots for dinner, making some extra for this dish. Then in a day or two, use your extra carrots and sweet potato for this dish. Stovetop cooking is perfect for summertime or any time of the year. Enjoy this Americanized version of an Italian favorite. I was looking to make something different in the gluten free bread category. So, I did a Google search for Jamaican bread and the rest is history. Coco bread got its name because it is usually made with coconut milk, however, there are several version online that call for regular milk, and even coconut. The texture of these lovely pockets are truly amazing for being gluten free. I will be making these often. This recipe was converted to gluten free from this gluten Jamaican Coco Bread Recipe.
