It’s not only trick or treat time for the kids, but us adults desire treats, as well. Imagine sweetened cream cheese, pumpkin, and graham crackers. What do you get? Pumpkin cheesecake! Then wrap them in chocolate and you get heaven in ball! Alternatively, instead of using ground gluten free graham crackers you can ground chocolate cookies. You can make these pumpkin cheesecake chocolates elegant by topping with candy pearls, drops of colored chocolate or another variety of chocolate, or dip the tops in a second color of chocolate. For the kids you can make them colorful by adding sprinkles, jimmies, etc. Or do a combination of both. Enjoy! Continue reading “Gluten Free Pumpkin Cheesecake Filled Chocolates”

Colorful Gluten Free Quinoa Salad

iMAGE: Quinoa Salad Vegetables

I’m not one big on quinoa salad, as I usually enjoy my food either cold or hot. And most of the gluten free quinoa salad recipes I’ve tried are not flavorful enough for me. I finally got this recipe right, though. The pineapple really makes this dish flavorful, so much that I didn’t even need a dressing. You can always top it with lemon, though, for even more flavor, or even your favorite salad dressing. In addition, if you replace the corn with other vegetables, you can makes this dish not only gluten free, but corn-free and grain-free. I hope you enjoy this recipe, as it brings a lot of color to the table. Continue reading “Colorful Gluten Free Quinoa Salad”

When I make cupcakes I prefer to use natural frosting rather than artificial food coloring, though when I do use coloring, I use Select Tea’s natural food coloring for non-baked/heated food. In the gluten free Halloween cupcakes pictured, decorations were used for color, which can be used year after year. I’ve listed several links to different cupcake and cake recipe, along with frosting choices. Enjoy and be creative!

Baked Gluten Free Sweet Potato Fries

Sweet Potato French Fries

This month, Joy Bauer’s recipe contribution comes from her Celiac Disease Recipes Collection. Low in fat and sodium, this gluten free sweet potato fries recipe is absolutely delicious without a thing added to them besides a little olive oil cooking spray. We found them a welcome change in our gluten free dinner menu. Fries don’t have to be crispy and drenched in oil to taste great. If you haven’t made them yet, I’m sure you’ll agree. Thank you again, Joy for your healthy gluten free recipes. Continue reading “Baked Gluten Free Sweet Potato Fries”

Gluten Free Pie Crust with Lattice Top (No Starches)

Image: Gluten Free Peach Pie

For pie crusts, I usually use my Gluten Free Phyllo Dough Recipe, as I created it long ago when I was satisfied with this heavier texture as a substitute for phyllo dough. However, it turned out to be a wonderful gluten free pie crust recipe instead, but it is not dairy-free. I used it in my Gluten Free Peach Custard Tart. This new recipe is dairy-free. Gluten Free Consomme Rice

My mother was famous for her beef consomme rice recipe. However, Campbell’s Beef Consomme Soup is not gluten free; therefore, I could no longer make it. Missing its jell-like properties, I decided to convert her recipe to an easier gluten free one, using plain broth. Though if you have the time, Emeril on Food Network has a wonderful gluten free consomme recipe, where you can use any flavor broth you desire, (beef, chicken, or vegetable broth) (make sure it’s gluten free). It all depends upon what you are serving and/or your dietary needs. Beef has the best flavor, to me. However, the photo below represents chicken consomme rice since I was serving chicken that day. My husband enjoyed it so much, he went back for seconds. Continue reading “Gluten Free Consomme Rice”
