In an effort to add more vegetables to my diet, I am finding more and more ways of either hiding them or adding them to standard recipes. Homemade hash browns do not take much longer to cook than the frozen kind. The only extra work is in peeling them. However, they don’t turn out as crispy as frozen do. A Healthier Gluten Free Burger with Spinach

Gluten Free Spinach Burger

A naturally gluten free burger can be tasteless, but this one is full of flavor and is a great way to hide vegetables! When I told my husband I was going to add spinach to our burgers his eyebrows raised appearing very concerned. I smiled, and reassured him he wouldn’t taste it. He enjoys spinach raw, as in spinach salad, but definitely not cooked, though he’d eat it by mixing it with other food on his plate. I served him his burger, along with a salad which contained zucchini, and he enjoyed both, but loved the burger! It’s on the sweet side, and you can omit the chipotle or hot sauce for kids, and possibly the onion, or saute the onion before adding to the raw meat. On the 4th of July I had a sweet tooth. Actually, I have had a sweet tooth all week, but not for dessert. I went to the grocery store, hungry, the other day and ended up with a cart full of naturally gluten-free foods, such as gluten-free cocktail onions and raspberry balsamic vinegar. The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. Gluten-Free Breaded Zucchini Kabobs

My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. Gluten-free Zucchini Casserole with cheese

I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! This fresh beets and pear salad was a delightful change. Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. Now that I have my tomato allergies I had to get creative. Broccoli Potato with Gluten Free Cheese Sauce

Many months ago I posted a recipe for broccoli stuffed potato with cheese sauce, but the file became corrupted and it disappeared! Someone asked me to republish it. The most important part of the recipe is the gluten free cheese sauce which you can use to make macaroni and cheese or add atop a baked potato, broccoli or cauliflower. It is also the base for cheese soup. You can add pieces of cooked broccoli to the top of a baked potato and pour on the cheese sauce. Pecan Stuffed Snow Peas with Creamy Smoked Filling

The holidays are almost upon us which has inspired me greatly in creating new recipes, but specifically these stuffed snow peas. Besides using these as appetizers they are a great way to get your kids to eat vegetables, too! If you use cream cheese, of course, they will not be dairy-free, but there are alternatives you can use nowadays. If you have a nut allergy you can skip the nuts and fill them just with the cream cheese filling. This stuffed snow peas appetizer is one of the best appetizers I have ever had, but of course they contain many of my favorite ingredients! All this and they’re gluten-free!
