Gluten Free Truffles

I was so pleased with these gluten free truffles, as this was my first time coating them in tempered chocolate. Tempering the chocolate, discussed below, will give your truffles a professional shine. Tempering chocolate seems much faster than it appears in the directions below. It really is a chore. Unless these are a gift, I would skip that step and just melt the chocolate and not let it cool too much before dipping. Truffles are very easy and fast to make unless you are dipping them in chocolate. But it was so well worth it, as these were a gift. You may decorate the tops with white chocolate mixed with food coloring (Select Tea makes natural ones), or you may drizzle a bit of thin chocolate on the top after it sets a bit, or leave plain, as I did. I thought the papers that I used were decoration enough. Gluten Free Chicken Recipe: Broiled Honey Mustard Fillets

I’m in love, and I’m not referring to my husband. I’m in love with this honey mustard gluten free chicken recipe! I was was in a rush and need an easy gluten free chicken recipe that was low in fat and dairy-free. It was wonderful! It is similar to orange chicken, without the orange. If you’re not dairy-free you may also enjoy my Gluten Free Honey Yogurt Chicken Recipe which is also very good; and less sweet and a little creamy. However, this gluten free chicken recipe is a bit more gourmet, as it calls for white wine and other flavorful additions. Twisted Yeast-Free Gluten-Free Breadsticks with Cheese

These gluten free cheese breadsticks taste cheesier than the usual recipes because they are rolled in cheese, with only a little cheese inside. I have found that even if I quadruple the amount of cheese inside, you still do not taste as much cheese compared to these. This particular recipe can be twisted which makes for a more elegant presentation. Similar to pizza crust, they are crunchy on the outside and doughy on the inside. You may bake them for a shorter time if you wish your gluten free cheese breadsticks softer. Since my husband approves, and he eats gluten, he’s the best to judge. He loved this recipe the best. He dipped them in pizza sauce as an appetizer. I’m sure Super Bowl Sunday he’ll be asking for this gluten free recipe. Enjoy! My hubby sure did! Gluten Free Casserole: Beef Pesto Rice

In a rush to make a gluten free dinner? Try this easy gluten free casserole recipe using premade gluten-free basil pesto. Add veggies, if you desire, or serve with a salad. This recipe includes only 4 ingredients and can be made in about 15 minutes. Some rice brands may take longer to cook, however, I found one brand that cooks in under 20 minutes, less. You can speed up the cooking time by using instant rice, which is lower in carbs and only takes about 5 minutes to cook. Gluten Free Spritz Cookies Made by Hand

These gluten free spritz cookies are popular in Scandinavian countries during Christmas time. You can even make them with a device. They are a butter cookie either made using a cookie press, pastry bag, cookie cutter, or handmade shapes. Not having a cookie press myself, yet, and since the dough was too thick for a pastry bag, I chose to experiment with different methods of joining balls of cookie dough together to make my gluten free spritz cookies. I was hoping this would help those who cannot afford a cookie press. I created 1/2 teaspoon balls of dough, either using 5 or 6 balls, and filling the center with the same size or smaller balls. I found the smaller balls, close together, work best, seen in the cherry filled cookie in the photo below. Of course, the traditional version is not gluten free, however, just replacing the flour for gluten free flour and starches, and adding a bit of baking soda and xanthan gum results in great gluten free spritz cookies. Gluten Free Glazed Meatballs – All Beef

These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. Gluten Free Cornbread – Cranberry Polenta Bread

Polenta is coarser than cornmeal and compliments this gluten free cornbread (actually gluten free polenta bread) recipe well, as it calls for superfine rice flours. It is just like a cornbread, but a coarser grain. I used Golden Pheasant brand, found at my local grocery store. You can definitely use cornmeal, if that is what you like, or is easier to obtain. This recipe was created upon my husband’s request for a coarser, crumbly, gluten free cornbread. It is moist, yet has more texture and crumb.
