Gluten Free Chocolate Chili

You heard it right, chocolate chili! I also threw in some bacon. I love to keep my guests guessing what the ingredients are in this chili. My daughter made a similar chocolate chili recipe, and she won an award for it. Unfortunately, for me, it contained tomatoes. Being allergic to tomatoes, I created my own chocolate chili recipe, gluten-free of course. You can top this chili with cheese and/or gluten free bacon bits. I over cook some bacon to garnish the top and then add additional juice from the chili on top. It gives it a nice sheen, yet leaves the crunch for added texture. Gluten Free Zucchini Bread

Quite a bit of research went into creating this gluten-free zucchini bread recipe to get this recipe just right. Most gluten free quick bread recipes (breads using leavening agents to enable immediate baking, rather than allowing to rise), allow you to interchange the fruit vegetable or puree you use, except for zucchini bread recipes. Zucchini contains quite a bit of liquid. Therefore, you either need to lessen the other liquids in the recipe or squeeze out much of the liquid in the zucchini. Instead, I began with my banana bread recipe, and opted to add additional flour. This gluten free zucchini bread recipe was made with my own blend of gluten free cake flour. I link to it below. Blackberry Avocado Salad with Candied Walnuts

Last night for dinner I just wasn’t up to cooking anything, and wasn’t that hungry, but I managed to make some candied walnuts (I used agave), and threw together this blackberry avocado salad together that I absolutely loved! You may top this off with feta cheese, goat cheese, monterey jack, cheese substitute, your favorite cheese or plain. However, there is nothing plain about this salad. Gluten Free Falafel with Cucumber Sauce

Falafel, which are popular in the Middle East, is now served all over the world as a replacement for meat, normally have a cake-like texture to them, similar to doughnuts. The texture of this gluten free falafel is something you’ve probably never experienced before, but both my husband and I really enjoyed this. I normally would have cast this recipe aside because it is not the traditional texture inside, but we enjoyed it more than the usual. It has a creamy, almost bean-like texture inside and crispy on the outside. I added a few unusual ingredients, and I am really glad that I did. I hope you enjoy my new version of gluten-free falafel. Gluten Free Soy Free Soy Sauce Substitute

It’s difficult enough finding a gluten free soy sauce, let alone a gluten free soy free soy sauce. One does exist, though. South River Miso makes a gluten free soy free soy sauce substitute from chickpeas, Miso Tamari, chickpea flavor. It is supposed to be so good that they limit your purchase quantity because it takes at least 3 months to make. Their products are unpasteurized, living foods, rich in enzymes and beneficial microorganisms. They start shipping this year on September 15, 2011. I still need to contact them to find out if they avoid cross-contamination, though, as I see they make a barley miso, as well. This is my version of Hershey’s “Perfectly Chocolate” Chocolate Cake. This gluten free chocolate cake recipe; however, is moister. I knew it would be a very moist cake just by reading the recipe.
