Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)

These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Quick and Easy Garlic Mashed Potatoes

Looking for a side dish that is fast, easy, tasty and good enough to serve to guests or your family? Why not speed up your regular process for mashed potatoes by adjusting 2 steps and make garlic mashed potatoes? So many of us have very busy lives and need ways of speeding up the cooking process. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. And if you’re a garlic mashed potatoes lover, simply adding whole cloves of garlic to your potatoes while they boil will create creamy garlic mashed potatoes. Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn

Halloween is almost upon us and there are many parents who are looking for a gluten-free candy corn made in a facility without gluten and nuts. Can’t find one? Make your own! This recipe is an adaption of the Best Allergy Sites’ Peanut Free Candy Corn – Egg Free Gluten-Free Candy Corn Recipe to also make it dairy-free. I substituted the butter and dry milk powder with other ingredients, and removed the vanilla. Candy corn doesn’t usually contain vanilla, and if you use a dark vanilla it will change the color of the candy. Hope you have some kids to help you make this fun gluten-free Halloween candy! Gluten Free German Hot Potato Salad

This is my all time favorite potato salad recipe and potato side dish. My sister started making this about 30 years ago. She hasn’t been able to find the recipe, but did recall the ingredients. Instead of using all-purpose flour, as in a traditional German hot potato salad recipe, I used potato starch. I can’t remember the last time I made this and have lost the recipe, as well. What makes this recipe stand apart from other German Hot Potato Salad recipes is that the apple cider vinegar, combined with celery seed and a little bacon grease. Our entire family loves this recipe so much, we must have had it for about 20 straight years with our Christmas ham (with very few exceptions). It’s hard to believe Christmas is just 3 months away! I had to wing it on the quantities, but it tastes just like I remember – oh so good! Of course, I was always known for increasing the bacon and almost doubling the sauce. What are holidays for, right? This time I made it as the old recipe called for, as I just had 4 slices of bacon. Gluten Free Finger Sandwiches – Cucumber Roasted Red Pepper Hummus

This wonderful gluten free finger sandwich recipe idea was contributed from Allison Windfahl, author of The Gluten Free Fat Loss Plan. Roasted red pepper hummus is one of my favorite dips! To have another red pepper hummus recipe idea is just grand! Allison did not include a recipe for the actual hummus, however one can easily be found on the Internet. Just make sure you use a tahini sauce that is pure sesame paste, without any gluten ingredients, if you using that in your recipe. Gluten Free Grilled Halibut with Strawberry Cilantro Salsa

This wonderful grilled halibut recipe was contributed by Allison Windfahl, from her book, The Gluten Free fat Loss Plan. Halibut is wonderful for those with celiac disease, as it is an excellent source of Vitamin B-12 (in which many are deficient), as well as protein and niacin. Gluten Free Milano Cookies

I have been craving gluten free milano cookies, but of course, they don’t make any. I found a regular recipe for a knock-off milano cookie on Top Secret Recipes’s website. I knew that using regular (not superfine) rice flour would create a crunchy cookie, but I just cannot stand the gritty texture. I was able to convert it into gluten free milano cookies without the grittiness by using sorghum flour, potato starch and tapioca starch. Though sorghum doesn’t have a pleasant color, if the use of lemon extract provides more of a yellow color, just like milano cookies. And if you use clear vanilla it will even have a closer to milano cookie color. They came out great! Gluten Free Gnocchi

This gluten free gnocchi recipe is so easy! While visiting with one of my Dad’s Italian neighbors, I mentioned that I was on a gluten free diet. The woman told me that one of her close friends was also. She makes her some gluten free gnocchi once in awhile. I was going to the grocery store and asked the neighbor if there was anything she needed. She said that she wanted some rice flour to make some gluten free gnocchi. She called me to come over so that I can see how she makes it and shared her recipe with me. She froze some and sent me home with some. It freezes very well. She mentioned that gluten free gnocchi is more delicate than the gluten variety so when I tossed it with some pesto sauce I used a rubber spatula to prevent any breakage, though it really wasn’t a problem. And you can always add a touch of xanthan gum to firm it up. It worked out great, and the gluten free gnoccchi was wonderful! Enjoy! Continue reading “Gluten Free Gnocchi”

My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day. I thought I’d share my recipe for gluten free cauliflower soup with you which I made with very little ingredients on hand.
