October is National Cookie Month! What a great excuse to make a batch, right? These gluten free cookies are scrumptious! I love gluten free shortbread cookies probably because they have more butter than the average cookie recipe, but this recipe uses less butter and replaces it with a little nut flour. Enjoy! Raw Banana Ice Cream
There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream. However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!
Creamy Raw Avocado Chocolate Ice Cream
This gluten-free raw chocolate ice cream recipe is much better than the raw almond one I made several days ago – hands down! – hence the preface “creamy”. It’s rich, smooth and delightful. The less milk or milk substitute you add the richer it will become. A must try if you’re a chocolate lover. Continue reading “Creamy Raw Avocado Chocolate Ice Cream”
Gluten Free Chili Recipe Without Tomatoes
This gluten free chili recipe is made without tomatoes. I taste-tested this recipe so much I didn’t even need lunch, it was that good! You don’t need to cover this up with cheese and onions, but by all means, enjoy! It naturally thickened without the use of flour, but you can make it as thin or as thick as you wish. I wanted a thick chili today for use in my chili lasagna recipe. I will post that recipe in the next couple of days. In deciding what ingredients to use in this gluten free chili recipe, I considered some of the ingredients of my daughter’s award winning chili recipe, chocolate and bacon, but decided to go on the healthier side with lots of peppers, onion, green chiles and lean ground beef. It did the trick! I hope you enjoy this gluten free chili recipe as much as we have. Continue reading “Gluten Free Chili Recipe Without Tomatoes”
Gluten Free Biscuits
I really wanted to make gluten free biscuits a little healthier than the traditional recipes. I did not use corn starch in this recipe, therefore it is corn-free, depending upon which margarine you use. I used Smart Balance Spread versus the traditional butter. I am looking forward to trying one of the Earth Balance Spreads, too. Other changes I made were substituting agave syrup for sugar; and instead of using buttermilk I used non-fat Greek yogurt. This recipe is not dairy-free due to the Greek yogurt, but Greek yogurt is more easily digested compared to regular dairy products. If you haven’t had biscuits since you started your gluten-free diet I believe you will find these biscuits very delicious! They are definitely lighter than the gluten version I used to make. I hope you, your family and friends enjoy! Continue reading “Gluten Free Biscuits”
Baked French Fries Mozzarella and Gravy with Optional Beef Stew
Gluten Free Gourmet Diner Food – made healthier!
I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Raw Chocolate Ice Cream
I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Gluten Free Chicken and Pineapple Stir Fry
When you take a bite of this main dish, you first hit a bit of barely noticeable heat, multiple flavors of sweet vegetables, and succulent pineapple chunks. The sauce is not too thick, providing an incredible taste and texture. People are always pleasantly surprised how much they enjoy this recipe. Continue reading “Gluten Free Chicken and Pineapple Stir Fry”
Gluten Free Asparagus Prosciutto Risotto
On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice. However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. Continue reading “Gluten Free Asparagus Prosciutto Risotto”
No-Bake Gluten Free Granola Bars
While visiting with the grandkids I wanted to see them eat healthier snacks and created this recipe for gluten free granola bars. I loved them so much I will be making them for myself on a regular basis, perhaps with and without the chocolate! These are addicting! Enjoy creating your own gluten free granola bars by using this recipe as a base. Continue reading “No-Bake Gluten Free Granola Bars”
