I was just asked how to prevent gluten-free bread from falling. I recently read that breads usually fall from uneven cooking. These 3 things may help prevent this:

1. Use smaller baking pans.
2. Reduce liquids.
3. Use a shiny metal baking pan versus the dark metal ones.
