Gluten Free Dairy Free Ganache (Raw)

The main ingredient in this recipe may surprise you. It’s avocado! Yes. Avocado makes a wonderful substitution for fat and egg in many recipes. This dairy free ganache has very few ingredients: avocado, cocoa powder and agave syrup. Use it to frost cakes, cupcakes, donuts, fill pastries and more. It’s so rich, you’ll never go back to heavy whipping again!

Agave syrup is not only processed less than white table sugar, it is also low on the glycemic index. You can purchase brands of agave that are less processed than others or ones which are organic. Agave comes in different types: light and dark (also known as amber). Amber is stronger in flavor, a little close to molasses, but not that strong. However, dark or amber agave is less processed. Agave is sweeter than sugar and must be lessened by about 1/3 per cup. The recipe below has already been adjusted. I love the fact that I can use avocado instead of heavy whipping cream in this recipe, making a wonderful, rich, dairy free ganache. Chocolate – just have to love it!

Gluten Free Dairy Free Ganache (Raw)

Yield: Almost 2 cups

The richest, most natural ganache you'll ever make! Made with avocado.

Ingredients:

  • 2 ripe avocados, cut up into pieces
  • 1 cup pure cocoa powder
  • 5/8 cup agave syrup
  • 1 teaspoon pure vanilla extract

Instructions:

  1. Either in a food processor or blender, add all the above ingredients. Process until thoroughly blended. Check for lumps, and blend again, if necessary.

Tips

For a thicker ganache, especially for use in pastry, reduce agave by 1/8 cup, using only 1/2 cup.

    I’m guilty of whipping up a half batch of this just now to deal with my chocolate craving… I think I’ll be using it on my boyfriend’s birthday cake in a few weeks… amazing!

    This sounds very yummy, and I love that this recipe is vegan (and raw). Maybe this will help my hubby to overcome his “avocado trauma” that stems from a bad avocado recipe that I made in the past.
