Gluten Free Cheddar Cheese Quick Bread

From breakfast to main dishes to desserts, Carol lays out the smaller portions to use when cooking for two. I made her to-die-for Gluten Free Cheddar Quick Bread and my husband is still asking me when I’m going to make more.

Don’t Need to Freeze Everything to Keep Them Fresh

Instead of having to freeze leftover bread, and other baked gluten free baked goods that stale quickly, you can have fresh-baked items any time you desire.

Break Old Habits and Prevent Food From Spoiling

I had been cooking for four people until our children moved out. I have the recipes memorized and can’t seem to break those habits. So, my fridge and freezer are always full. That’s not a bad thing, but I literally run out of room. Instead, why not make what you’re going to eat.

Have More Variety

Cooking and baking in small batches also provides more variety. Rather than making a batch of three dozen cookies, you can make one batch of one dozen. Make just six muffins instead of a dozen. By the way, Carol’s carrot cake muffins look so yummy! I can’t wait to try them!

Portion Control

I’m looking forward to applying what Carol Fenster offers. Just this past weekend, I made over two dozen sandwich cookies. Our guest ate two and guess who ate the other 23? We did! I was afraid to step on this scale this morning! Luckily, Carol’s book serves as a gentle, friendly reminder. The book includes some light recipes such as chia breakfast pudding and sheet-pan supper of roasted fish and veggies.

Less Food Waste

Have you ever placed leftover in the fridge only to find the container hidden in a corner with mold growing on the food? I think we all have. If you cook only what you need, you won’t run into this as much.

American and International Favorites

While Gluten-Free Cooking For Two contains many America family favorites such as chili and mac-n-cheese, it also includes cultural dishes like Orange Beef Stir-Fry, Coq au Vin Blanc, and others.

Carol’s Sorghum Flour Blend

If you’re wondering what ingredients Carol uses in her baked goods, check out her classic sorghum flour blend in this recipe: Gluten Free Cheddar Quick Bread.
