Gluten Free Lady Fingers Recipe

You can easily make this gluten free lady fingers recipe by using my gluten free sponge cake recipe. (I have two recipes on this site for sponge cake, but I used the one calling for superfine rice flour.) The amount you make will vary, depending upon which pan you use. There are lady finger pans available, but you can get away with using a Hostess Twinkies Pan. You can also use a jelly roll pan and cut up individual pieces of cake. However, that method doesn’t look as nice and you are taking the chance of the cake crumbling. If you do try this method, prior to slicing, refrigerate the cake at least 4 hours, preferably overnight. Meanwhile, now you can make traditional tiramisu and more!

Gluten Free Lady Fingers

Homemade gluten free lady fingers recipe that your guests will rave about. They taste so much better than packaged gluten lady fingers.

Ingredients:

Instructions:

  1. Oil the cups of a lady finger pan or Twinkies pan; set aside. Preheat oven to 400ºF.
  2. Make the sponge cake as instructed at one of the above links. (Superfine rice flour is also available via Vitacost.com, internationally.) Follow this recipes for both temperature and cooking time.
  3. (I recommend trying one test lady finger so you can determine how much you wish to fill the pan. Temperature of ingredients and environment vary and cause significant changes when baking small items.) If using a Hostess Twinkie pan, fill about 1/4 way full. If using a lady finger pan, fill almost to the top. Bake for about 10 - 13 minutes, depending upon the lady fingers' depth. Test doneness with toothpick. When it is inserted into the center of a lady finger and comes out clean, it should be done. Clean pan and oil again prior to baking the next batch.
  4. Allow lady fingers to cool in pan for about 5 minutes. Then remove from pan and transfer to a wire rack to cool completely. Use in desserts such as the one pictured.
