Gluten-Free Low-Fat Mac-n-Cheese (Dairy-Free Options)

Gluten-Free Low-Fat Mac-n-Cheese

Yield: Makes about 4 servings

Gluten-Free Low-Fat Mac-n-Cheese

Delicious gluten free macaroni and cheese can be made using less fat and more flavor with ease right on your stove top!

Ingredients:

  • 8 ounces uncooked gluten free macaroni (truRoots Ancient Grain Elbow Pasta
  • 1/8 teaspoon salt, for water (optional)
  • 2 cups nonfat milk (or rice milk for dairy-free)
  • 2 tablespoons + 2 teaspoons white or brown rice flour
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon salt, or more to taste
  • 1 cup low-fat sharp shredded cheddar cheese* (Daiya or Follow Your Heart brands for dairy-free)
  • 1/8 teaspoon Gluten Free Chipotle Sauce or hot sauce (optional)

Instructions:

  1. Boil a large pot of water. (Gluten free pasta cooks best in tons of extra water.) Cook according to package instructions or longer if you do not care for al dente pasta. Rinse under cold running water and drain. Return the pasta back to the pot.
  2. While the pasta cooks, in a separate, cold, large saucepan, whisk together the milk, rice flour, onion powder, and salt until thoroughly combined. Bring to a boil over medium-high heat. Whisk frequently. Once it boils, lower the heat and simmer frequently stirring until thickened, 1 - 3 minutes.
  3. Remove the saucepan from the heat and stir in the hot sauce. Add the cheese and stir until it melts. Add the pasta and toss to coat thoroughly.
  4. If you enjoy the crust on your mac and cheese that baking creates, place the macaroni and cheese in an oven-safe dish and place under the broiler for a minute or so.

Tips

*Be sure to read ingredient labels on prepackaged low-fat cheese to ensure it is 100% cheese and truly gluten free. I once purchased a package of pre-shredded chipotle cheese and it turned out not to be gluten free.
