Gluten Free Oatmeal Recipe: Dark Chocolate Oats

Joy Bauer is known for her healthy recipes. In this gluten free oatmeal recipe (actually whole oats, in this case), Joy has combined healthy, high soluble fiber (keeps you feeling full) oats, or steel-cut oats, with one of my favorite staples, chocolate, making a wonderful gluten free breakfast. And we all keep hearing how dark chocolate is a healthy choice. Simply by adding unsweetened cocoa powder, sugar or sugar substitute (I used xylitol), and some fruit, makes for a healthy, hearty breakfast. Using berries is ideal. (I just didn’t have any one hand.) As berries are also high in fiber, and lower in carbs than bananas. So, if you’re on a gluten free diet or not, give this gluten free oatmeal recipe (oats) a try for your next breakfast meal, and get your New Year’s resolutions off to a great start, as well as you day!

Gluten Free Oatmeal Recipe: Dark Chocolate Oats

Yield: Serves 1

A delicious low-fat, gluten free oatmeal recipe, flavored with cocoa powder, the healthiest way to consume chocolate!

Ingredients:

  • 1/2 cup [gluten-free] oats, old fashioned, or quick-cooking oats (may substitute ¼ cup [gluten-free] steel cut oats)*
  • 1 1/2 teaspoon cocoa powder, unsweetened
  • 1 1/2 teaspoon sugar, granulated, (may use sugar substitute if diabetic)
  • 1/4 teaspoon vanilla extract
  • 3/4 cup(s) berries, fresh, or frozen, thawed berries (may substitute 1 sliced banana)

Instructions:

  1. Prepare the oats with water or skim milk according to package directions.
  2. Stir the cocoa powder, sugar, and vanilla extract into the prepared oatmeal. Top with berries (or sliced banana).

Tips

*Note: For celiac disease, choose oats that are certified gluten-free.

    What a great way to ‘spice’ up boring old oatmeal! Although, I can’t think of a single recipe where chocolate wouldn’t make it better :o)
