Gluten Free Roasted Balsamic Carrots

If are tired of the same old vegetable recipes, this gluten free recipe may do the trick! This recipe comes to us compliments of Joy Bauer. Joy is the NBC’s Today Show nutritionist! She has some wonderful gluten free recipes in her Recipes for celiac disease collection. In addition, Joy has many healthy recipes in her other collections, several of which are gluten-free. She has so graciously offered to share her gluten free recipes from her personal website with our community.

About half way through the baking, I stepped into the kitchen and by the aroma I knew I would love this dish! You could smell the combination of fresh rosemary, garlic and balsamic. It had my mouth watering well before hitting the plate!

I did not cut the carrots in wedges, therefore, had to bake them longer, but they were delicious!

This particular recipe works well for heart health, celiac disease, some IBS and healthy skin. Check out my photo below. It’s so easy to make, very tasty and virtually no clean up! Joy has added nutritional facts, as well! (Don’t forget to use a gluten-free balsamic vinegar – most are. I use Newman’s Own Organics.) (UPDATE: Newman’s Own is no longer guaranteeing gluten-free status of their products.) This carrot recipe was a great compliment to my meatloaf and roasted red peppers mashed potatoes! I added a couple of rosemary twigs right before serving. Unfortunately, I didn’t get a good photo of it, though, and neglected to slice the carrots. Enjoy!

When it comes to heart health, carrots alone provide soluble fiber, potassium, and vitamin B6. In this recipe, the addition of olive oil and garlic makes it that much more potent. Just another way to enjoy one of our all-time favorite vegetables!

Gluten Free Roasted Balsamic Carrots

Gluten Free Roasted Balsamic Carrots

An easy way to provide flavor to boring carrots. Slice them, wedge them or leave baby carrot whole. Either way their delish, and healthy!

Ingredients

  • 1 pounds carrot(s), peeled and cut into wedges
  • 1/4 cup vinegar, balsamic
  • 2 tablespoon rosemary, fresh, minced
  • 2 cloves garlic, minced
  • 1/4 teaspoon paprika
  • salt substitute
  • pepper, black ground
  • 1 tablespoon oil, olive

Directions

  1. Preheat the oven to 400° F.
  2. Tear a large piece of aluminum foil, about 24" long. Spread the carrots out evenly over one half. Sprinkle with the vinegar, rosemary, garlic, and paprika. Season with salt substitute and pepper. Drizzle with the olive oil and fold the opposite end over, folding around the edges to make a neat package with no openings.
  3. Place the package on a baking sheet and bake 20 – 25 minutes, until the carrots are tender when pierced with a knife. Serve immediately.
