Gluten-Free Breaded Zucchini Kabobs

My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. I will definitely use this zucchini kabobs recipe for entertaining. I hope you enjoy them as much as we did!

Gluten-Free Breaded Zucchini Kabobs

This zucchini recipe is a delicious way to consume veggies, especially for those who do not like them. It makes an elegant presentation! And it's egg-free!

Ingredients:

Instructions:

  1. Slice the zucchini thinly with a potato peeler or electric slicer. You should get about 6 slices or more per zucchini, depending upon your slicer's thickness.
  2. Spray with or dip in oil. The more oil you use, the more flavorful your zucchini will be.
  3. Push each slice onto a plate of bread crumbs; cover the top with additional bread crumbs and press them onto the zucchini. Bread each side about 2 times.
  4. Beginning at the smallest end, carefully roll each slice and either insert a toothpick into the very end, through the other side or add onto a kabob stick. Note that in the photo above I show you how the roll will look if you begin rolling from the largest end. One of the zucchini above stands out, as being sloppy.
  5. Place each one either on top of a rack with a cookie sheet under it or on top of broiling pan.
  6. Add the pan to the middle rack of your oven. Broil for about 5 minutes or until golden brown. Watch carefully to prevent burning.

  1. A very unique idea for serving Zucchini. It looks like it might take a lot of time rolling and preparing the kabobs but it looks like the effort would be worth it!

    1. Angie, thanks for your comment. It is virtually effortless, though! You literally slap just spray or dip the zucchini strips in oil and slap them on the bed of bread crumbs and roll. The rolling takes about 10-15 seconds per strip.
