Grilled Corn on the Cob with BBQ Butter

Grilled Corn on the Cob with BBQ Butter

A recipe for grilled corn on the cob with barbecued flavored butter, a real treat!

Ingredients:

  • 8ears yellow corn
  • For the BBQ Butter:
  • 2 Tablespoons butter (or gluten-free margarine)
  • 1/2 cup hopped yellow onion
  • 2 cloves garlic, minced or grated
  • 1 teaspoon gluten-free Hickory Liquid Smoke (Wright's)
  • 2 teaspoons smoked paprika (McCormick's)
  • 1/2 teaspoon cayenne powder
  • 1/4 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1/2 cup water
  • 12 Tablespoons (1 1/2 sticks) butter (or gluten-free margarine - Earth Balance is dairy-free)
  • Black pepper (and salt if using unsalted butter)

Instructions:

    To Make Barbecue Butter:
  1. Preheat a skillet with 2 tablespoons butter.
  2. Add onions and saute until lightly tender, about 3 minutes.
  3. Add garlic and saute for 30 to 60 seconds.
  4. Remove from heat, pour in liquid smoke, and stir.
  5. Add smoked paprika, cayenne, cumin and chili powder; and stir.
  6. Return to heat and cook for 1 minute or until fragrant.
  7. Add water and cook until most of the water evaporates.
  8. Add 1 1/2 sticks of butter and heat over medium heat to melt.
  9. Add onion mixture and stir.
  10. Remove from heat and set aside to cool and puree in a blender; or add to a heat-proof bowl and use a hand-held immersion blender.
  11. Season with salt and pepper, to taste. Refrigerate until corn is grilled and bring to room temperature if refrigerated for a long period.
  12. To Prepare the Corn:
  13. Preheat your grill to medium heat. If you have a gas grill with two or three sources of heat, preheat only the area you need.
  14. Pull the husks of the corn down to the bottom, but do not tear them off.
  15. Remove all of the silk from the corn and discard.
  16. Bring the husks back up to the top to cover the corn.
  17. Place the corn on the grill, cover, and grill for 15 to 20 minutes, turning each cob over twice.
  18. Test for doneness by poking a few kernels. When they are soft and tender, they are done.
  19. Once the cobs are cool enough to handle, remove husks and serve with BBQ Butter below.
  20. To Prepare the Corn:
  21. Preheat your grill to medium heat. If you have a gas grill with two or three sources of heat, preheat only the area you need.
  22. Pull the husks of the corn down to the bottom, but do not tear them off.

  24. Bring the husks back up to the top to cover the corn.
  25. Place the corn on the grill, cover, and grill for 15 to 20 minutes, turning each cob over twice.

  27. Once the cobs are cool enough to handle, remove husks and serve with BBQ Butter below.

Tips

For kids, omit the chili and cayenne powder.
