Stove Top Gluten Free Mac and Cheese

Make creamy gluten free mac and cheese on your stove top without thickening with flour or starch. Eggs are the only thickener use which enhances the richness of the decadent side dish.

Stove Top Gluten Free Mac and Cheese

A protein boosted gluten free mac and cheese that is rich, creamy and flavorful. No need for special flour or starches as it is thickened with egg.

Ingredients:

  • 2 cups gluten free pasta or macaroni (Glutino's for al dente/chewy) (or Tinkyada, Jovial, or Heartland)
  • 2 Tablespoons gluten free margarine (Smart Balance or Earth Balance for dairy-free) or butter
  • 1 large egg
  • 1/2 cup half & half (or heavy cream) (or coconut milk or other dairy-free milk)
  • 1/3 teaspoon dry mustard powder
  • 5 ounces (or more) shredded cheddar cheese (mild, medium, or sharp) (Daiya brand for dairy-free)
  • Salt and pepper, to taste

Instructions:

  1. Bring 2 quarts of water to a boil.
  2. Add a splash of cooking oil and then the pasta; stir; and cook at a medium boil according to manufacturer's instructions, or to your liking.
  3. While the pasta is cooking, in a bowl whisk together the egg, half & half, mustard powder, salt and pepper; and set aside. Prepare the shredded cheese and set aside.
  4. Drain pasta using a colander, and return to the saucepan.
  5. Add margarine and stir over medium heat until it melts.
  6. Add half & half/egg mixture, stir and cook for at least 2 minutes.
  7. Once the liquid gets nice and hot, add the cheese and stir until it melts.
  8. Add some milk to thin, if desired. Season with salt and pepper, to taste. Serve immediately.

Tips

Variations:

Add cooked ham, bacon, vegetables, or sauteed bell peppers (if not nightshade intolerant).
