Very Gingery Pear and Sweet Potato Soup

He and his co-author of “The Get Healthy, Go Vegan Cookbook” generously offered to share 2 of their recipes from their latest book. Ginger Pear Sweet Potato Soup

Sweet potatoes, packed with nutrients, vitamins, and fiber are the body of this hearty soup.

Ingredients

  • 2 pounds sweet potatoes (preferably garnet yams), peeled and cubed
  • 1½ cups peeled, chopped bosc or red d’anjou pears (about 2 pears)
  • [gluten-free] olive oil cooking spray
  • 1 cup chopped onions
  • 2 tablespoons crystallized ginger
  • 1 teaspoon ground ginger
  • 1 (1-inch) piece peeled fresh ginger
  • 4 cups [gluten-free] vegetable broth
  • kosher or sea salt to taste
  • freshly ground black pepper to taste
  • 1 tablespoon fresh lime juice
  • ¼ cup sliced scallions

Instructions

  1. Place the sweet potatoes and 1 cup pear in a large saucepan with water to cover. Bring to a boil, lower the heat, and simmer, covered, for about 15 to 20 minutes, until sweet potatoes and pears are soft.
  2. Meanwhile, coat a large skillet with cooking spray. Add the onions and sauté for 4 minutes. Transfer the onions to a food processor. Drain the sweet potatoes and pears and add them to the food processor. Add the crystallized, ground, and fresh ginger and pureé the mixture until smooth, adding some of the broth if necessary for the mixture to process more easily.
  3. Add the pureé back to the saucepan. Add the broth, salt, and black pepper. Simmer for about 15 minutes. Add the lime juice. Divide among six bowls. Top each bowl with scallions and the remaining chopped pears.
