In an effort to add more vegetables to my diet, I am finding more and more ways of either hiding them or adding them to standard recipes. Homemade hash browns do not take much longer to cook than the frozen kind. The only extra work is in peeling them. However, they don’t turn out as crispy as frozen do. Gluten-Free Breaded Zucchini Kabobs

My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. Gluten Free Zucchini Casserole

Gluten-free Zucchini Casserole with cheese

I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. You can either keep it vegan or add meat, cheese, etc. You can use traditional shaped zucchini or round ones if you can get a hold of some. The one I used in the photo below is from my garden. Gluten Free Vegan Zucchini Mango Soup

Looking for delicious gluten free soup recipes? I harvested my first round zucchini (photo below) this week and decided to use it to test a new mango soup recipe. You are sure to see more zucchini recipes in the near future because my plants are growing like crazy! You can serve this soup warm or cold. This is recipe is great way to use up any produce you have that may soon spoil or wilt. My original intention was to only use vegetables and one fruit, but I was awfully hungry while making it and decided to toss in a potato and am glad that I did. It was very tasty and satisfying!
