There is nothing like homemade marshmallows. They are softer and more flavorful. Think marshmallow fluff but sturdier, and they can be turned into any flavor you want. The Cinnamon Churro Marshmallows flavor is made up of cinnamon-flavored marshmallows with a crunchy sweet cinnamon texture on the outside. They’re unique and addictive. Unfortunately, this flavor of Smashmallows brand is not gluten free. So, take the time to make them yourself. It’s pretty simple. You have to try this recipe at least once.

My granddaughter was visiting and the need to be on the BRAT diet (bananas, rice, applesauce, and toast) arose. So, on short notice, I threw together a few ingredients to make some applesauce pancakes without any starch, just rice flour. Of course, I omitted gums as well. You can also make them with bananas. I just didn’t have any on hand. She loved them! Even my husband I had a shared a few. They are light and delicate, not to mention tasty. Continue reading “Gluten Free BRAT Pancakes”

Bake onion rings for those you love! If you have about 45 to 60 minutes, you must try these crunchy, baked gluten free onion rings. I not only bread them in gluten free breadcrumbs, but I enjoy adding Italian seasoning and grated Parmesan cheese. Seasonings are optional, though. The method of this recipe is so successful at creating crunchy onion rings, that you’ll swear they are deep-fried. If you do prefer fried onion rings, see Chef Robert Landolphi’s Tri-Spiced Onion Rings and Dipping Sauce Recipes. They’re super! Continue reading “Crunchy Baked Gluten Free Onion Rings”
