I knew I had to use up the asparagus I had in the frig. I decided to make a creamy asparagus and potato soup. Out of all my gluten free soup recipes that are creamy, I find this one to be the healthiest. When deciding on a thickener I considered using a gluten-free sour cream and Greek yogurt, but remembered what Gluten Free Chef Rob mentioned about thickening things naturally. I already had some boiled potatoes in the frig which I added in, but you can add fresh potatoes to this recipe all in one pot. I usually use potatoes in sweeter soups such as my Zucchini Mango Soup Recipe and Butternut Squash and Apple Soup, but this turned out wonderful, – not too much asparagus, just right, and nice and savory! Gluten Free Sauteed Napa Cabbage

I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Chicken and Snow Peas

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think! Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. Looking for delicious gluten free soup recipes? I harvested my first round zucchini (photo below) this week and decided to use it to test a new mango soup recipe. You are sure to see more zucchini recipes in the near future because my plants are growing like crazy! You can serve this soup warm or cold. This is recipe is great way to use up any produce you have that may soon spoil or wilt. My original intention was to only use vegetables and one fruit, but I was awfully hungry while making it and decided to toss in a potato and am glad that I did. It was very tasty and satisfying! I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole. Low Fat Healthy Baked French Fries

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet.
