2-1/2cupsgluten free whole rolled oatsBob's Red Mill
1-1/4cupschopped nutsalmonds and walnuts
1/4cupflax seed meal
1/4cupseedssunflower, hemp, etc.
1/4cupoil
1teaspoonpure vanilla extractor banana extract
45drops liquid steviaTrader Joe's
1/4teaspoonmonk fruit extract powdernot a sugar alcohol
1teaspooncinnamonor omit to make other flavors
1/8teaspoonsalt
1cupdried berries or chopped dried fruitoptional
Instructions
Preheat oven to 275ºF.
Combine the oats, nuts, seeds, and flaxseed meal in a large bowl; set aside.
In a measuring cup, combine the oil, vanilla or banana extract, liquid stevia, monk fruit extact, cinnamon (if using), and salt.
Add the liquid mixture to the dry mixture and stir until all of the dry ingredients are coated. Transfer to a rimmed baking sheet and distribute in a single layer. Bake for 30 minutes, turning the granola over once midway through baking.
Add dried fruit, if desired, and stir to combine.
Transfer to a cooled baking sheet or heat-proof bowl and allow to cool, uncovered.
Serve as a snack or cereal. (I enjoy it plain, with fresh fruit, and with homemade raw almond milk sweetened with stevia and sometimes with vanilla extract.) Cover and store at room temperature for up to 1 week.
