Place the flat side of each strawberry, where the stem was sliced off, face down. Slice off the tip to use for a Santa hat. Pipe dollops of whipped cream on top. Top with the tip/Santa hat. Pipe a tiny dot of whipped cream on top of the hat to create a pom-pom.
Melt 1 or 2 tablespoons of high-quality milk or dark chocolate in a small bowl or cup. (If you're using chocolate chips, add about 1/2 teaspoon of organic shortening to the chocolate prior to melting in the microwave in 10 to 20-second intervals. Allow the chocolate to cool a bit. Transfer to a piping device or bag, fitted with a tiny plain writing/decorating tip, and pipe out tiny little eyes, just under the hat. Keep chilled until ready to serve.
Dairy-Free Version:
Use the coconut whipped cream recipe for dairy-free or vegan.
Brand of Chocolate:
When chocolate chips contain gums and other thickeners to keep their shape, they do not melt well. You'll end up adding more shorteneing, which makes the chocolate softer when at room temperature. Since you don't have to hold this chocolate, it still works out well for this recipe.
