If you have a lot of cucumbers on hand, perhaps from a home garden, this cucumber recipe is perfect. It is extremely flavorful and slightly sweet. Use either vinegar or lime juice for tang.

Cucumber Salad

If you enjoy vinaigrette or lime juice on salads, you'll surely enjoy this new cucumber salad recipe. Experiment and make it your own.
Ingredients:
4-1/2 cups diced cucumbers
1 red bell pepper, diced
1 green bell pepper, diced
1 cup freshly chopped cilantro (or flat leaf parsley)
2 tablespoons minced yellow or red onion
1 tablespoon minced garlic
5 tablespoons extra-virgin olive oil
5 tablespoons white distilled vinegar (or lime juice, to taste)
1 avocado, diced (optional)
1/8 teaspoon stevia or 1 teaspoon granulated sugar
Lots of salt and freshly black pepper, to taste
Instructions:
Toss together in a large bowl the cucumbers, bell peppers, cilantro, onion, and garlic.
Pour the oil and vinegar over the top and season with lots of salt and pepper and the stevia. Cover and refrigerate until ready to serve.
If desired, add avocado just prior to serving and toss. Serve using a slotted spoon as much water drains out of the cucumbers.
